  • Choose quail eggs with rough shells, and a thin layer of white powder on the shell, as these are good quality quail eggs.
  • Good quail eggs feel heavy in your hand, and when placed in a bowl of water, they will sink to the bottom.
  • When shaking fresh quail eggs, there should be no sound, so you should choose these.
  • Do not buy eggs with blackened shells, which feel light in your hand, and when shaken lightly, you will hear the sound of liquid flowing.

How to choose fresh and delicious gourd

  • A good gourd will have a bright green skin, a straight body, and a stem that is still moist; choose gourds that are of moderate size.
  • If you touch the outer skin and feel a layer of fuzz, you should buy it because this indicates it’s freshly picked.
  • Do not buy old gourds or those with black spots, or gourds that have rotted or spoiled.

  • Prepare vegetables and fruits

    After purchasing, peel the gourd, wash it with clean water, and then cut it into thin, bite-sized pieces.

    Peel the shallots, wash them, and slice them thinly. Remove the roots from the green onions, wash them, and chop them finely.

    Put the eggs into an pot and add enough water to cover the eggs, then place the pot on the stove and boil over high heat for about 15 – 20 minutes before turning off the stove.

    After the eggs are cooked, pour out the boiling water from the pot, add cold water, and proceed to peel the eggs.

    Tip: To make the broth sweeter when peeling the quail eggs, remember to keep the liquid inside the quail eggs.

  • Stew Quail Eggs with Gourd

    Add 3 teaspoons of cooking oil to the pot, and heat over medium heat. When the oil is hot, add sliced shallots and sauté for about 1 minute until fragrant.

    Next, add the chopped gourd and quail eggs and stir-fry. When the gourd is slightly cooked, add seasoning including: 1 tablespoon of fish sauce, 1 teaspoon of salt, and 2.5 teaspoons of monosodium glutamate, and stir well for about 5 minutes. When the mixture is fragrant, add water until it just covers the gourd.

    Cover the pot, bring to a boil over high heat for about 10 minutes until the gourd is cooked, then adjust the seasoning to suit your family’s taste before turning off the heat. Add chopped green onions and a little ground pepper, and it’s ready to enjoy.
