Ingredients for Making Bánh răng bừa (Bánh tẻ) Serves 4 people

Ground meat 150 gr Rice flour 200 gr Wood ear mushrooms 3 pieces Shiitake mushrooms 6 pieces Seasoning powder 1.5 teaspoons Salt powder 1.5 teaspoons Ground pepper 1 teaspoon Shallots 2 bulbs Banana leaves 2 leaves String or nylon thread 10 gr (10 strands) Cooking oil 2.5 tablespoons

Origin of the wheel-shaped cake

  • Rice cake – also known in some places as leaf cake or wheel-shaped cake because they resemble the shape of a wheel tooth.
  • This is a traditional dish in the Northern Delta and Thanh Hoa.
  • In the past, wheel-shaped cakes were only made for the full moon, death anniversaries, and the Lunar New Year, but nowadays this dish has become more popular.

How to choose fresh ingredients

  • You can buy pre-ground pork or buy the meat and grind it yourself.
  • Choose pork that has a bright red color, with shiny fat, and the surface of the meat should be slightly moist, not slimy or mushy.
  • Touch the meat to test it; if the meat has high elasticity, it indicates that it is fresh and good quality.
  • Avoid choosing pieces of meat that are pale green, dark red, or have black bruises, and those that feel sticky to the touch and have an unusual odor.

How to choose good wood ear mushrooms

  • Usually, we will use dried wood ear mushrooms, so pay attention to whether the mushrooms have white mold or not; avoid choosing mushrooms that are moldy because moldy mushrooms will become mushy when soaked in water and will not ensure quality.
  • Choose mushrooms that have large and thick ears, as they will be chewier and crunchier; be careful to select amber-colored mushrooms that lean towards coffee color, and avoid mushrooms that are too dark.

  • Prepare ingredients

    Soak the wood ear mushrooms and shiitake mushrooms in warm water for about 15 minutes to expand, wash clean, drain, and then chop finely.

    Peel and finely chop the shallots.

    Wash the pork thoroughly, drain, and then cut into small pieces, then put it in the blender and grind it finely.

  • Making the filling

    Place a pan on the stove, turn on medium heat to heat the pan, add about 2 tablespoons of cooking oil and then add chopped shallots.

    When the shallots are evenly golden and fragrant, add the minced pork and stir well. When the meat is firm, add the seasoning including: 1/2 teaspoon of seasoning powder, 1/2 teaspoon of flavoring powder, and 1 teaspoon of ground pepper.

    Finally, add the chopped wood ear mushrooms and shiitake mushrooms, sauté for another 5 – 7 minutes, then turn off the heat.

  • Making the batter

    Put the rice flour into a large bowl, mix the rice flour with 800ml of water, add 1/2 tablespoon of cooking oil, 1 teaspoon of flavoring powder, and 1 teaspoon of seasoning powder, then stir well. Let the batter rest for about 1 – 2 hours for the flour to swell.

    After the batter has soaked and expanded, add it to a pot and place it on the stove over low heat. When the batter thickens, becomes smooth, and mixes evenly, and feels heavy when stirring, turn off the heat.

    After turning off the heat, continue to stir for another 1 – 2 minutes to make the batter smoother.

    Tip:
    • During this step, remember to keep the heat very low and stir continuously to prevent the batter from sticking to the bottom of the pot.
    • Even after turning off the heat, don’t forget to keep stirring the batter, as the heat is still high and if not stirred, the batter will stick to the bottom.

  • Wrapping the cake

    Fresh banana leaves are washed clean, then dried or briefly boiled to make them flexible and easy to wrap. Rinse the banana leaves in cold water and let them drain, tearing them into large pieces about 1/2 the size of an A4 sheet.

    Dry the banana leaves, stack 2 pieces of banana leaves on top of each other, scoop a bit of the flour mixture and spread it on top, then scoop a bit of meat filling that has been stir-fried and evenly spread it over the flour, and finally scoop a little more flour to cover the meat filling completely.

    Pinch the two edges of the banana leaves to wrap, roll evenly to ensure the cake is firm and beautiful when steamed, then fold the ends of the banana leaves underneath the cake.

    Tip

    • You should hurry to wrap the cake while the flour is still warm to make the cake tastier.
    • You can use string to tie the cakes to ensure they do not come undone.

  • Steaming the cake

    Prepare a pot of boiling water to steam the cake.

    Place the cake in the steamer, steam the cake for about 15 – 20 minutes from when the water boils until the cake is cooked, turn off the heat and take the cake out.

  • You can use fresh banana leaves or dong leaves to wrap the cake.

Tips for Storing Steamed Rice Cake

  • If you do not finish eating, place the cake in a food container and store it in the refrigerator refrigerator; when you want to eat, steam it again, but it is best to eat it fresh. Doing this will allow the steamed rice cake to be stored for about 4 – 5 days.
  • In cases where there is not much time to steam the cake again, you can put the cake in a microwave and heat it at medium temperature for about 3 – 5 minutes before it is ready to eat.
