How to choose fresh duck meat
- Prioritize buying fat ducks with round breasts, fully grown feathers; these are mature ducks with more meat.
- Avoid choosing ducks that are too old or too young; old ducks have tough meat, while young ducks have soft, unappetizing meat.
- Pay attention to the duck’s belly; do not choose ducks with sagging bellies, as these have laid many eggs and the meat is usually tough and hard to cook.
How to cook Stir-fried Duck Meat

Prepare and cut the meat
After purchasing the duck, check for any remaining feathers. If there are any, use tweezers to remove them, then wash thoroughly with water before cutting the meat.
Use a knife to separate the lean meat from the thighs, breasts,… of the duck, discarding the bones. Then, cut the duck meat into thin, bite-sized pieces.
How to clean duck meat, avoiding any odor:
- First, briefly scald the duck with boiling water and then use tweezers to remove any remaining feathers (if any).
- Next, apply vinegar (or alcohol) evenly on all sides of the duck, let it sit for about 10 minutes, then rinse with clean water before cooking.

Prepare other ingredients
First, mince 1 clove of garlic and 1 shallot, and chop 1 chili pepper into small pieces.
For 1 piece of ginger, slice it into thin strips. Take 1 stalk of lemongrass to finely chop, and slice the remaining 4 stalks into thin strips.
Finally, chop 10 stalks of green onions into pieces about the length of a pinky finger, and finely chop 100g of Vietnamese coriander.

Marinate the meat
Put the meat in to marinate with 1/2 teaspoon of ground pepper, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of seasoning powder, 1/2 teaspoon of fish sauce, chili, 1/2 minced garlic, 1/2 red onion, and 1/2 minced lemongrass. Then mix well and let it sit for 20 minutes for the meat to absorb the spices.

Stir-fry
Turn on the stove to a low heat, add 2/3 tablespoon of cooking oil to the pan, when the oil is hot, add the sliced lemongrass and sauté until fragrant, then remove the lemongrass.
Next, add the red onion, garlic, and remaining minced lemongrass to the pan and sauté until fragrant. Then, add the meat and stir-fry continuously for 7 – 10 minutes until the meat is firm, then add 1 teaspoon of soy sauce, ginger, and chili, turn up the heat and stir well.
Finally, add the previously sautéed lemongrass, green onions, and Vietnamese balm to stir-fry together for about 2 minutes, season to taste, and you can turn off the stove.
Tip: Depending on your preference, you can use cooking oil or utilize goose fat as a substitute for cooking oil to prepare the dish.
