Prepare the ingredients
Tomatoes should be washed clean with water, then remove the stem and use a knife to cut the tomatoes into wedges.
Next, wash the pineapple, cut off the eyes and core, and then cut the pineapple into small bite-sized pieces. Peel the shallots and chop them finely.
The pork ribs should be washed with diluted salt water, then rinsed with clean water and placed in a basket to drain. After that, cut the ribs into small bite-sized pieces.

Marinate the ribs and sausage
Place the ribs on a clean plate and season with 1 spoon of seasoning powder, 1/2 teaspoon of sugar, 1/2 teaspoon of MSG, and 1 teaspoon of fish sauce. Mix well to let the pork ribs absorb the spices.
Next, use scissors to cut the green onion tops into the bowl containing the sausage mixture. Then season with 20g of fried garlic and 1 teaspoon of pepper into the sausage mixture. Mix well for all the ingredients to blend together. Marinate the ribs and sausage for about 15 – 20 minutes.

Stir-fry the ribs, tomatoes, and pineapple
Place a pot on the stove, add 1 tablespoon of cooking oil, and when the oil is hot, add chopped shallots and sauté until fragrant.
When the shallots are fragrant and golden, add the marinated pork ribs to the pot and stir-fry for about 5 minutes until the ribs are browned.
Next, add half of the tomatoes and all of the prepared pineapple to the pot, continue to stir-fry for about 2 – 3 minutes until the tomatoes and pineapple are soft and fragrant.

Prepare the broth
After sautéing the ribs, tomatoes, and pineapple, add 750ml of water to the pot and bring it to a boil over medium heat. Once the water boils, place the tamarind in a strainer and add it to the broth, using a pair of chopsticks to mash the tamarind until it releases its juice and blends into the broth, discarding the tamarind pulp.
Next, season with 1.5 tablespoons of sugar, 1 teaspoon of salt, 1 teaspoon of monosodium glutamate, and 1 teaspoon of fish sauce, stirring well and continuing to simmer on low heat for about 15 minutes.
After 15 minutes, use a spoon to scoop out the marinated pork paste in small pieces and add it to the pot. Add half of the remaining tomatoes and cook for an additional 10 minutes. Then, adjust the seasoning to taste and turn off the heat.

Place the noodles in a bowl. Add some pork ribs and pork paste, then top with pineapple and tomatoes for decoration, and sprinkle with a few chopped green onion sprigs.
Finally, pour the sweet and sour broth that has been prepared into the bowl, and the dish is complete.
