  • Should buy those with bright colors, characteristic aroma, avoid choosing mushrooms that are bruised or have a rotten smell. If there are white milky substances oozing from the cut, it is a sign of poisonous mushrooms.
  • When choosing fresh shiitake mushrooms, opt for those with moderate caps, tightly curled, and a slightly yellow-brown color. If you see dark brown mushrooms, it is best not to buy them, as they may be poisonous.
  • Avoid mushrooms with dark spots or wrinkles on the cap and signs of sliminess.

How to choose fresh and delicious cobia

  • Fresh cobia will have clear eyes and you can clearly see the pupil inside. Conversely, if the fish has cloudy, dull eyes, it is no longer fresh and should not be purchased as the meat will not be good.
  • Additionally, you can check the gills of the fish to assess its freshness. If the fish is fresh, the gills will be bright red, while spoiled fish will have dark red or even brownish-black gills.
  • You should not choose fish when you press lightly on the fish meat, especially near the belly, if it feels soft and mushy or leaves a dent in the skin that does not bounce back.

Effective methods to remove the fishy smell

  • To clean and remove the fishy smell, you can soak the fish in rice water for about 15 – 20 minutes, then take it out, rinse with clean water, and proceed to prepare it.
  • You can use a mixture of salt and alcohol to soak the fish for about 10 minutes, then rinse with water.
  • Alternatively, you can use ginger to eliminate the fishy smell by soaking the fish in water, adding a crushed piece of ginger, soaking for about 5 minutes, then taking it out to drain before cooking.
