Fry the dried snakehead fish
After purchasing the dried snakehead fish, wash it thoroughly with water from rinsed rice, then cut the fish into small pieces about 2 finger joints long.
Heat a pan on the stove, add 4 tablespoons of cooking oil, wait until the oil is hot, then add the dried fish to fry both sides for about 7 – 10 minutes over medium heat. When the fish pieces are firm and you can smell the aroma, turn off the heat and remove the fish to a plate.
Tip: To prevent oil from splattering, you should dry the fish pieces with a paper towel before adding them to the pan. -
Prepare the sugar mixture
Take a small bowl, measure half a cup of water (about 100ml), then add 3 tablespoons of sugar, a little salt, and monosodium glutamate to the bowl, then stir well until the mixture is completely dissolved.

Fry the dried fish with sugar
You can use the same pan used for frying the fish, pour out the excess oil, keeping about 1 tablespoon. Then add the mixture of water and sugar and cook over medium heat until it boils.
Continue to cook while watching the heat, until the mixture reduces and becomes slightly sticky, then lower the heat and add the dried fish into the pan. Stir well to coat the fish with sugar and seasoning. When the sugar thickens and turns a beautiful amber color, turn off the heat.
