Pork belly 300 gr Papaya 300 gr (slightly ripe green papaya) Green onions 3 stalks Red onions 5 bulbs Garlic 1 bulb Ginger 1 bulb Coconut caramel 1/2 tablespoon Cooking oil 1 tablespoon Fish sauce 1 tablespoon Common spices a little (seasoning powder/ pepper/ monosodium glutamate)

  • Choose papayas that are elongated, with green skin and yellow spots.
  • When holding the papaya, it should feel firm and sturdy, and the stem should be fresh with sap flowing, which is the best sign.
  • Additionally, you should prioritize buying papayas on sunny days, as they will be sweeter at that time.

  • Prepare the pork

    To eliminate the odor and clean the pork, rub the whole piece of meat with crushed ginger for about 15 minutes and then rinse it thoroughly with water.

    Then cut the meat into bite-sized pieces, about 1/2 finger thick.

    • To prevent pork from being smelly, before cooking, blanch the pork in boiling water for about 3 minutes with 1 crushed shallot, as shallots help effectively eliminate odors.
    • Additionally, you can add a little white wine to the boiling water before removing the meat, as white wine will help remove odors most effectively.
    • After that, rinse the meat with cold water and then proceed to cook, and the meat will no longer have an odor, making the dish from pork more delicious.

    Next, add the marinated pork and stir-fry over high heat for about 5 minutes until the meat is firm, then add the papaya, 1 tablespoon of fish sauce, 1 teaspoon of seasoning powder, and 1/2 teaspoon of monosodium glutamate (optional) and mix well.

    Finally, add about 1/2 cup of water (rice bowl size), cover the pot, and simmer on low heat for about 15 minutes until the pork and papaya are tender and flavorful. Sprinkle with green onions, adjust the seasoning to taste, and then turn off the heat.
