How to choose fresh lotus seeds
- Choose fresh lotus seeds that are round, uniform, approximately the size of half a finger joint, and have a slightly yellowish white color.
- You can check by pressing your finger into the lotus seed; if the seed still releases a little water when pressed, it is fresh.
- Avoid choosing lotus seeds that are bruised or have wrinkled outer shells. Also, do not choose seeds that are damp as they are more likely to bruise and wilt quickly.
How to Prepare Dried Lotus Seeds

Preparation of Lotus Seeds
Soak the lotus seeds in cold water mixed with a little alum for 30 minutes to prevent them from browning, then remove the lotus seeds and drain.
Tip:- If using dried lotus seeds, you need to soak them longer, about 3 – 4 hours
- You can use dried lotus seeds instead of fresh ones.
Put the lotus seeds in a pot, boil for 30 minutes, then remove and drain.

Fry the Lotus Seeds
Place a pan on the stove, wait for the pan to heat up, then add 100ml (about half a cup) of cooking oil. Wait until the oil is hot, then add the lotus seeds and fry on low heat for about 10 – 15 minutes.
Note that while frying, you must continuously stir to avoid burning the lotus seeds.
Fry the lotus seeds until they begin to dry and are evenly cooked and crispy, then turn off the heat and remove the lotus seeds to a strainer to drain the oil.

Dry Roasted Lotus Seeds
After the lotus seeds have drained oil, add 1/2 teaspoon of salt and mix until the salt dissolves.
Now, place a pan on the stove and add 1 teaspoon of butter to the pan.
When the butter melts, add the lotus seeds to the pan and roast on low heat for about 5 – 7 minutes.
While roasting, stir continuously until you see that the lotus seeds are dry, have no oil, and are crispy, then turn off the heat and transfer to a plate.
