Catfish 4 fish Tomatoes 10 fruits Red onion 5 bulbs Garlic 3 cloves Bird’s eye chili 5 fruits Green onion 3 stalks Cooking oil 2 tablespoons Coloring sauce 1 tablespoon Fish sauce 6 tablespoons Lemon juice a little Common spices a little (Sugar/ salt/ monosodium glutamate)

How to cook Catfish stewed with tomatoes

  • Prepare the ingredients

    When you buy catfish, scrape off the scales, cut off the fins and gills, then gut the fish and remove all the internal organs.

    Wash the fish thoroughly with water, then use a little salt mixed with lemon juice to rub all over the fish to remove the fishy smell. Rinse the fish with clean water 2 – 3 more times.

    Remove the stem from the tomatoes, wash them clean, drain and make a shallow X-shaped cut at the bottom.

    Remove the ends of the garlic, peel, wash, and chop finely. Remove the ends of the shallots, peel, wash, and slice thinly.

    Cut the green onions, remove the roots, wash, and cut into pieces about 2 finger lengths.

  • Fry the fish

    Put 2 tablespoons of cooking oil into a pan and heat it on the stove over medium heat. When the oil is hot, add the chopped garlic and fry for about 2 minutes until fragrant.

    Next, add the fish and fry until golden for about 2 – 3 minutes, then gently flip the fish.

    Add to the fish pan 2 spoons of sugar, 1/2 teaspoon of monosodium glutamate, 1 tablespoon of color sauce, 6 tablespoons of fish sauce, 1/2 cup of filtered water (rice bowl).

    Gently turn the fish to let the seasoning soak evenly, then lower the heat and braise the fish for another 5 minutes, then taste and adjust the seasoning to your liking.

    Next, add the tomatoes, sliced shallots, and chopped green onion tops, then cover and braise the fish for another 8 – 10 minutes.

    When the fish is cooked, add the chopped green onions and braise for another 30 seconds – 1 minute, then turn off the heat to finish.

  • Prepare the ingredients

    To save time, when buying fish, you should ask the seller to clean it for you; when you get home, just wash the fish clean with water and let it drain in a drainer.

    Remove the stem from the tomatoes with your hands, then wash them clean and cut them in half.

    Shallots, after peeling off the outer layer, place them on a cutting board and chop finely.

    Remove the stems from the chili, wash them clean with water, then slice them thinly.

    Put the prepared fish into a bowl along with the mixture of ingredients including: sliced chili, minced shallots, 2 tablespoons of fish sauce, 1/2 teaspoon of salt, 1 tablespoon of sugar, and 1/2 teaspoon of monosodium glutamate.

    Then, use chopsticks to mix well so that the ingredients coat the fish evenly, and marinate for about 15 minutes for the fish to absorb the seasoning.

  • Fish Stew

    Use chopsticks to turn both sides of the fish until it firms up, then add boiling water to cover the fish and add tomatoes.
