How to make Durian Jelly with Pandan Noodles

Cook Coconut Milk
Put 500ml of coconut milk, 20g of rolled pandan leaves, and a little salt into a pot and bring to a boil, when it starts boiling, reduce the heat and simmer for about 5 minutes.
Prepare a small bowl with 2 tablespoons of water and half a tablespoon of about 30g of tapioca flour, stir well, and add it to cook together with the coconut milk.
Let it sit for about 2 minutes to remove the pandan leaves. At this point, you can adjust the sweetness to your preference, then turn off the heat and let it cool.

Make Pandan Noodles
Cut the remaining 40g of pandan leaves into small pieces and put them into a blender, adding 200ml of water. After blending, strain the pandan water through a sieve to get a bowl of clear liquid. Pour this liquid into a pot, add a little salt, and a little sugar and wait for it to boil.
While waiting for the water to boil, mix 50g of rice flour, 70g of tapioca flour, and 100ml of water until the flour is completely dissolved. Pour the flour mixture into the boiling pandan water, stirring continuously for about 2 minutes until a thick mixture is obtained, keeping the heat low to fully cook the flour.
Tip:You can sieve it again to avoid clumping!
Prepare a bowl of water and add 2 – 3 ice cubes to hold the noodle strands. Pour this thick flour mixture into a steamer, then use a spoon to stir in a circular motion to create the pandan noodles. When the noodles solidify, transfer them to another bowl of water to clean them from the old water.

Make jelly
Put 300ml of water into a pot and bring to a boil. Pour 5g of jelly powder into a bowl containing 50g of granulated sugar, mix well and add to the pot of water, boiling the mixture of sugar, jelly powder, and water, stirring continuously.
When the water boils, reduce the heat to low and simmer for an additional 2 minutes before pouring it into a mold to wait for the jelly to set.
Tip:
- You can use coconut water instead of plain water to make the jelly sweeter and cooler.
- It’s best to place it in the refrigerator to help the jelly set faster and taste better.

Final product
Place the bánh lọt into a large bowl, add the jelly taken from the refrigerator, some crushed ice or ice cubes, and whole durian segments. Add the coconut milk prepared earlier. Now you have completed the Malaysian durian jelly dessert and it’s time to enjoy it.
