Make the caramel sauce
Add 150g of sugar, 1 teaspoon of lemon juice, and 200ml of water into a pot and place it on the stove, then simmer over low heat. You do not need to stir the mixture; just watch until it boils, then gently shake the pot on the stove.
After about 5 – 7 minutes, the mixture will gradually turn a brown color. At this point, turn off the heat and add 2 tablespoons of water, then continue to gently shake the pot on the stove.
A few minutes later, the caramel will cool down a bit; pour 1 tablespoon of caramel into each flan mold.
Tip: You can prepare the molds in a steaming basket and then add caramel to each mold at this step. Additionally, you can use bowls or other molds as you wish. -
Beat the eggs and mix the condensed milk
First, separate the 2 egg whites into a bowl, and keep the 2 egg yolks and the remaining 6 eggs in a bowl or another large bowl.
Next, add 1 tube of vanilla into the yolk mixture and the 6 eggs to make the flan more fragrant, then use chopsticks to stir the eggs until well combined.
Then, use 700ml of hot water at about 70 degrees Celsius to mix with 380g of condensed milk, and stir until the milk is fully dissolved.
Tip: You should not beat the eggs too much or create too much foam, as this will make the flan not smooth after steaming. -
Mixing the flan mixture
In this step, you gradually add the mixed milk while whisking the egg mixture. Continue to whisk steadily for about 3 minutes and then strain through a strainer to achieve a smooth batter.
-
Steaming the cake
First, slowly pour the egg and milk mixture evenly into the molds and lightly cover the molds with lids. Cover the steaming pot and then turn on the stove.
Steam the cake on low heat for about 25 minutes, and it will be cooked!
Tip: You should not tightly cover the lids of the cake molds to avoid the cake being over-steamed. -

So the delicious, fragrant condensed milk flan with caramel scent is complete. The cake is soft and smooth, with a light creamy and sweet taste that is sure to please your family, from adults to children. Show off your skills right away!

Making the caramel layer
First, you put 80g of sugar into a pot with 45ml of water. Then you place the pot on the stove and cook over medium heat. You do not need to stir the sugar, just gently shake the pot to distribute the sugar evenly.
After 5 minutes, when you observe that the sugar has turned a brown color, you add the remaining 45ml of water and continue to cook on low heat until the sugar completely dissolves, then turn off the heat.
After 5 – 7 minutes, when the caramel stops bubbling, you evenly pour the caramel into the cake molds.
Tip: To check if the caramel has dissolved, take a bit of caramel and put it in a glass of water. If the sugar does not dissolve, then the caramel is successful! -
Beating eggs and heating milk
First, you crack 3 eggs into a large bowl and use a whisk to lightly beat them. Next, you add 120g of condensed milk and 350ml of fresh milk into a pot and heat it on low for about 3 – 5 minutes.
Tip: You should only heat the condensed milk until you feel warmth when you hold your hand over the pot, and do not let the milk mixture boil to make the cake smoother after it is done. -
Mixing flan mixture
In this step, you slowly pour the milk mixture into the eggs, then add 1/2 spoon of vanilla extract and stir well. After about 3 minutes, you strain this mixture through a sieve until smooth.
-
Steaming the cake
You pour the flan mixture into the caramel molds you prepared earlier and lightly cover the tops with lids. Place the cakes in a steamer and turn on the stove.
Finally, you adjust the flame to medium to steam the cake for about 15 – 20 minutes until cooked!
Tip: If you don’t have lids for the molds, you can use aluminum foil to cover the tops of the molds. -

Tips for successful execution
- When the caramel is done, quickly pour a thin layer into each cake mold. Avoid letting it sit too long as caramel hardens easily when cooled.
- To check if the cake is done, you can use a toothpick to poke into the cake and pull it out. If the toothpick comes out clean, it means the cake is done; if it has a sticky mixture on it, the cake is not yet done.
- When beating the egg and milk mixture, you should not beat too vigorously to avoid creating bubbles.
- Only stir the mixture in one direction and sift the mixture finely before steaming.
- Do not steam the cake at too high a temperature, as this will cause the egg and milk mixture to boil and become porous.
Tips for storing flan
- Flan can be used for 7 – 10 days, so keep the cake in a covered box and store it in the fridge refrigerator. Avoid too low temperatures as they will make the cake dry and crumbly.
- Do not keep it near raw foods with a fishy smell, like meat and fish, as the cake will easily absorb the smell and spoil quickly.
- Do not store the cake at room temperature as it will spoil very easily.
