How to make almond cookies

Beat the butter mixture
Put 150g of unsalted butter (softened at room temperature) and 130g of granulated sugar in a bowl and use the egg beater to beat until the mixture is fluffy and light yellow.
Next, add 50g of cooking oil, 1 egg yolk, and 3ml of vanilla extract to the mixture and continue beating until it forms a fluffy, smooth, cream-colored mixture.

Mix the cake flour
Combine 275g all-purpose flour, 35g almond flour, 3g baking powder, and 1g salt in a bowl and mix well.
Next, add the flour to the butter mixture and mix well. Then, use your hands to knead the dough until it forms a smooth and elastic ball.

Shape the cake
After the dough has been kneaded to a smooth consistency, roll it into small balls (15g/ball) and use a knife to gently press two lines (like a plus sign) to shape the cake.
Then, place an almond on top and press lightly to make the almond stick to the cake.

Bake the cake at a temperature of 160 degrees Celsius for about 30 minutes until the cake is done, then turn off the oven and leave the cake in the oven for an additional 5 – 10 minutes to make it crispier.
