How to choose fresh chicken
For live chicken
- When buying live chickens, choose those that move actively, have shiny beaks, smooth feathers, and no foul smell. Hold two chickens of the same size; the heavier one will have firmer meat.
- Do not buy if you see the chicken looking sluggish, with ruffled feathers, dripping beak and nose, pale or bruised comb, and bruised or swollen legs; these are sick chickens that are unsafe to use.
For processed chicken
- Freshly slaughtered chicken will have bright skin, characteristic yellow or white color, thin skin, and a smooth texture when touched. Press on the meat to feel its firmness and elasticity.
- Do not buy if you see dull-colored chicken, soft and mushy when pressed, showing bruises, leaking water, or having a foul smell; this chicken has been stored for too long and is not good.
How to make Curry Chicken

Prepare the chicken
To clean and eliminate the smell of the chicken you bought, massage it thoroughly with salt and then rinse it well. Next, cut the chicken into bite-sized pieces.
Peel the onion and garlic, then put them into a mortar along with 1 chili pepper, and pound into a paste.
Effective ways to clean chicken and eliminate odors- Method 1: Use lemon juice or vinegar mixed with salt, then massage it onto the chicken for about 1 minute, then rinse with cold water; this will clean the chicken and eliminate the odor.
- Method 2: Mix 1 crushed ginger with white wine and massage it onto the chicken, let it sit for about 30 minutes, then rinse well, let it dry, and proceed to cook.

Marinate the chicken
Put the chicken into a bowl and mix well with 1 teaspoon of seasoning, 1 teaspoon of soy sauce, 1 teaspoon of sugar, 1/2 of the crushed onion, garlic, chili mixture, and 1/2 teaspoon of curry powder.
Marinate for about 30 minutes to allow the chicken to absorb the flavors.

Cook the chicken
Place a pot on the stove, turn on medium heat and add 1 tablespoon of cooking oil, heat it up and then add the onion, garlic, and chili to sauté until fragrant, then add the chicken and stir until it is sealed.
Next, add 50ml of water, 1 teaspoon of salt, and 1 teaspoon of sugar to the pot with the chicken, stir well, once the water boils, reduce the heat, cover the pot, and simmer gently until the water reduces to a thick consistency. Taste and adjust the seasoning, simmer for another minute, then turn off the stove.

Final product
