  • Mix cinnamon powder with sugar

    Add to a bowl 1 tablespoon of palm sugar, 1/2 tablespoon of cinnamon powder, and mix well.

    Next, add 1/2 teaspoon of yeast, stir well, cover for 5 minutes to let the yeast rise like crab bricks.

    Then, use a hand dough mixer to knead until the dough mixture is sticky and smooth.

    Finally, cover the bowl with plastic wrap and proof the dough for 2 hours.

  • You can freeze the cake batter after the first rise. When needed, take it out to thaw and then rise for the second time (the second rise will take a bit longer than normal) before baking as usual.
  • If the cake’s interior is dry after baking: This could be due to over-baking or the type of flour used that has a high water absorption rate. Therefore, you should adjust by adding more milk to keep the dough soft, moist, and tastier.
  • If the cake smells strongly of yeast after rising, it is because the yeast has been active in the dough for too long, producing a lot of gas and making the cake smell too yeasty. Therefore, you should reduce the amount of yeast or be mindful that the second rise doesn’t take too long.
  • Store the bread in a box or sealed bag in a cool place. It can be used for about 2 – 3 days.
