How to make Crispy Pork Belly

Prepare the ingredients
Peel the red onions, wash them thoroughly, then chop finely.
Clean the green onions, then separate the roots and the leaves; cut the roots into small pieces, and cut 3/4 of the leaves into bite-sized pieces, leaving the remaining 1/4 to be chopped for garnish.
Slice the chili, and adjust the amount of chili according to your spice preference.

Prepare the meat
After buying the meat, soak it in diluted salt water for about 5 minutes, then rinse it thoroughly with water. To ensure the meat cooks quickly and doesn’t dry out, cut it into bite-sized pieces that are not too thick or too thin, about 1/3 of a finger’s width.
Tip: You should buy pork belly or you can substitute it with shoulder meat!

Marinate the meat
Put the cut meat into a bowl, marinate with 1/2 teaspoon of sugar, 1 teaspoon of minced shallots, and mix well for the meat to absorb the seasoning.
Place a pan on the stove, add a little oil, when the oil is hot, add 3 tablespoons of sugar and cook until the sugar is completely dissolved and turns a caramel color, then turn off the heat and add 2 tablespoons of filtered water, stirring well. Pour the caramel into a bowl.
Tip:
- You can replace the filtered water with coconut water to enhance the richness and aroma of the dish.
- When adding water, you should stand back to avoid splashes!

Stir-fried meat
Place a pan on the stove, add a little oil and stir-fry the meat until golden, then add chopped green onions and shallots to stir-fry together. After 3 minutes, add 2 tablespoons of fish sauce, 1 teaspoon of sugar, 1/2 tablespoon of monosodium glutamate, 2 tablespoons of seasoning powder, and 1 tablespoon of ground pepper, and mix well.
After 5 minutes, add chopped green onions and sliced chili into the pan, increase the heat to medium, and stir well. Stir-fry the meat until it is evenly golden, and the meat juices thicken, then season to taste. Turn off the heat and serve the meat on a plate with a little ground pepper and chopped green onions on top.

Prepare the ingredients
To remove the odor, soak the pork belly in diluted salt water for about 15 minutes, then rinse with water and pat dry.
Cut the meat into rectangular pieces or slice it, but not too thin, as it will shrink and become dry when frying.
Peel the onion, wash it, slice it, and chop it finely. Trim the roots off the green onions, wash them, and cut them into pieces about 2 finger lengths.

Caramelizing Sugar
Add 1 tablespoon of cooking oil and 3 tablespoons of sugar into a pan or pot and place it on the stove. Turn on high heat until the sugar boils and turns a dark brown color, then immediately turn off the heat and add 1 tablespoon of water to dissolve. Pour the caramel into a bowl to set aside.

Making crispy pork belly
Place the pan on the stove over medium heat, when the pan is hot, add the meat and fry until the meat releases fat and the edges are browned, then add the finely chopped onion and fry together with the meat for about 1 minute.
Next, add 1 tablespoon of monosodium glutamate, 1/2 tablespoon of chicken seasoning, 1/2 tablespoon of salt, 1 tablespoon of fish sauce, 1/2 tablespoon of sugar, and 1/2 tablespoon of ground pepper, stirring evenly over medium heat for about 3 minutes.
