How to prepare Green Bean Sticky Rice with Purple Sticky Rice using a rice cooker
-
Extracting the color from purple sticky rice leaves
Clean the purple sticky rice leaves, then select the fresh leaves and place them in a basket for cooking.
Place a pot on the stove, add about 300ml of water, turn on high heat, and wait for the water to boil before adding the purple sticky rice leaves.
Reduce the heat and cook for about 10 – 15 minutes until the water turns a deep red-purple color, then add another 100ml of filtered water to the pot. Continue cooking for about 10 – 15 minutes on medium heat until the water boils again, then turn off the heat.
Use a sieve to strain the purple sticky rice leaf water.
Note: When cooking purple sticky rice leaves, you should keep the heat low to preserve the vibrant color. Cooking on high heat will cause the color to darken and look less appealing.
-
Soaking the sticky rice
Wash the sticky rice with water until the water runs clear, then drain it. Add about 1 teaspoon of salt to the rice and mix well.
Pour 300ml of the purple sticky rice leaf water into the bowl of sticky rice and soak for about 20 minutes before cooking.
-
Steaming sticky rice
Place some pandan leaves at the bottom of the rice cooker first to make the sticky rice smell better. Then pour the soaked glutinous rice into the rice cooker, cover the lid and switch to “cook” mode as you would when cooking regular rice.
After about 5 minutes of cooking the sticky rice, add the coconut milk, mix well, then cover the lid and continue cooking.
When the cooker switches to “warm” mode, add about 2 teaspoons of sugar, mix well, and heat in the rice cooker for another 15 minutes before you can take the sticky rice out to serve.
-
Making mung bean filling
Put 100g of peeled mung beans into a pot. Add 150ml of water, cover the lid. Cook on low heat until the water in the pot evaporates, then turn off the heat.
