How to choose fresh and delicious oxtail
- You should buy the whole oxtail; if you buy pre-cut ones, it will be hard to distinguish whether the meat is still fresh or spoiled.
- The tail should have a bright red color, and when touched, it shouldn’t feel mushy or slimy or have any unusual colors. The skin of the tail should have a slightly yellowish color.
- Avoid choosing meat that has an unusually bright red color, as it may have been soaked in chemicals to keep it fresh longer.
- If you want a delicious, tender braised oxtail dish, you should choose younger beef or buy veal tail for an even tastier dish.

Prepare the Marinating Ingredients
Peel and wash the shallots and garlic, then chop finely and put them on a plate. Take 4 stalks of lemongrass, wash them clean, cut them into finger-length pieces, then use a knife to crush them. Wash the remaining 4 stalks of lemongrass and slice them thinly into rounds using a knife.

Prepare and Marinate the Beef Tail
Clean the beef tail by scraping off any remaining hair and then cut it into bite-sized pieces. After that, wash the beef tail with water.
Next, marinate the beef tail with 1 tablespoon of salt, 1 teaspoon of monosodium glutamate, 2 teaspoons of sugar, a little ground pepper, 3 tablespoons of fish sauce, along with the sliced lemongrass and finely chopped shallots and garlic. Add 3g of curry powder and 90g of chili paste into a bowl. Use chopsticks to mix well and marinate the beef tail for at least 20 minutes.
Tip:- You can remove the smell of the beef tail by boiling it in a pot with 500ml of water over medium heat. Once the water boils, blanch the beef tail for 7-10 minutes, then remove and wash clean.
- To make the stew tastier and more flavorful, you should marinate the beef tail for at least 30 minutes to 1 hour. If you have time, marinating it overnight is recommended.
