If you use filleted snakehead fish, simply rinse the fish with water, then use salt to remove the fishy smell and the sliminess. Finally, rinse the fish again with clean water.
Tip: You can also use a mixture of vinegar or diluted lemon juice with warm water to remove the fishy smell and reduce sliminess. -
Prepare other ingredients
Shallots and garlic are peeled and washed clean. For lemongrass, wash it well and cut into slices.
Ginger and turmeric are peeled and cut into small pieces.
Then, put all the ingredients into a mortar and pound them until finely ground.
-
Make the marinade sauce and proceed to marinate the fish
After grinding the ingredients, continue to add 1 tablespoon of fermented rice, 1 tablespoon of sugar, 1 tablespoon of fish sauce, and 1/2 tablespoon of shrimp paste to the mortar and mix well.
Proceed to marinate the fish for 30 minutes with the prepared marinade, mixing well for the fish to absorb the seasoning.
Tip: To allow the fish to soak in the seasoning evenly and grill faster, you can make cuts along the body of the fish on both sides. -
Grilling Fish
Preheat the grill, then place the fish on the grill surface and grill for about 30 – 40 minutes.
Every 7 – 10 minutes, flip the fish to ensure it cooks evenly and does not burn.
