- For grilled goat, you should choose young goats, selecting the belly or thigh meat, as it will be softer and tastier when grilled.
- When buying goat meat, gently press the skin on the back of the goat with your fingernail; if the skin is punctured, it’s a young goat. If the skin is too thick and doesn’t puncture, it’s an old goat, which will be very tough to eat.
- Young goat meat will have a less pungent smell, a pink color, firm texture, and the meat fibers are usually smaller and smoother than those of older goats.
- When selecting the meat, you should check if the goat meat is leaking liquid or has a fishy smell; if it does, you shouldn’t choose it, as this indicates frozen goat meat, which can be harmful to health.
- Goat meat is currently often faked in the market, so you should buy goat meat from reputable stores or supermarkets that have proper stamps and food safety certificates to ensure the quality of the meat.

How to Prepare Grilled Goat with Fermented Bean Sauce

Prepare the Goat Meat
Wash the goat meat thoroughly with diluted saltwater twice, then drain and cut the meat into bite-sized pieces, placing them in a bowl.
How to Clean Goat Meat, No Smell
Method 1: Use White Wine
- Use two ginger roots, peel and crush them. Then mix with 70ml of white wine to create a ginger wine mixture.
- Rub this mixture thoroughly into the goat meat. Rinse with diluted saltwater and dry the meat with paper towels.
Method 2: Use Vinegar
- Dissolve 15 ml of rice vinegar in 1 liter of clean water, bring to a boil. Boil the goat meat in this mixture until it boils again, then remove it. At this point, the goat meat will have significantly reduced its smell.
Tip: When grilling goat meat, do not cut it into pieces that are too small, as they will shrink and not taste good.

Marinating goat meat
Add 1 teaspoon of seasoning, 1/2 teaspoon of monosodium glutamate, 1 teaspoon of sugar, 1 teaspoon of cooking oil, 1 teaspoon of satay, and 1 teaspoon of oyster sauce to the bowl of goat meat.
Continue by adding 1 teaspoon of chili sauce, about 2 – 3 large pieces of fermented tofu, and 1 teaspoon of fermented tofu sauce. Use chopsticks to mix well, then add eggplant and okra, and mix thoroughly. Marinate for about 30 minutes.
Tip: If you have time, you should cover the bowl of goat meat with plastic wrap and put it in the refrigerator for about 1 – 2 hours for the meat to absorb the spices evenly, making it more delicious when grilled!
