Goat meat 400 g Lemongrass 2 stalks Garlic 1 bulb Okra 100 g Eggplant 1 fruit Seasoning powder 1 teaspoon MSG 1/2 teaspoon Sugar 1 teaspoon Cooking oil 1 teaspoon Satay 1 teaspoon Oyster sauce 1 teaspoon Fermented bean sauce 1 teaspoon Chili sauce 1 teaspoon

How to choose and buy ingredients

How to choose good goat meat

  • For grilled goat, you should choose young goats, selecting the belly or thigh meat, as it will be softer and tastier when grilled.
  • When buying goat meat, gently press the skin on the back of the goat with your fingernail; if the skin is punctured, it’s a young goat. If the skin is too thick and doesn’t puncture, it’s an old goat, which will be very tough to eat.
  • Young goat meat will have a less pungent smell, a pink color, firm texture, and the meat fibers are usually smaller and smoother than those of older goats.
  • When selecting the meat, you should check if the goat meat is leaking liquid or has a fishy smell; if it does, you shouldn’t choose it, as this indicates frozen goat meat, which can be harmful to health.
  • Goat meat is currently often faked in the market, so you should buy goat meat from reputable stores or supermarkets that have proper stamps and food safety certificates to ensure the quality of the meat.
  • You can distinguish real goat meat from fake by observing whether the goat skin is thin and has a lot of meat; if so, it is real goat meat.
  • Raw goat meat has a very strong odor; when buying meat, you should ask the seller to cut the piece of goat meat in half and sniff it to check for any foul smell. If the smell is faint, that is fake goat meat you should not buy.

Notes when eating goat meat:

  • Do not eat too much: goat meat has a warming nature, so you should not eat too much goat meat as it will increase the risk of infections, especially for those with conjunctivitis, mouth sores, swollen gums, …
  • Do not eat goat meat together with watermelon or red beans: goat meat has a yang, warm nature while watermelon has a cooling nature. Eating them together can disrupt your digestive system.
  • Do not drink tea after eating goat meat: goat meat has a high protein content, while tea contains a lot of tannic acid, consuming them together can cause constipation symptoms. If constipation persists, it can be harmful to health.
  • Do not eat goat meat with pumpkin: both goat meat and pumpkin have a yang, warm nature, and eating them together can cause internal heat, easily generating heat.
  • Do not eat goat meat with chestnuts: these two types of food have high nutritional content, and eating them together can lead to bloating, indigestion, negatively affecting health.

How to Prepare Grilled Goat with Fermented Bean Sauce

  • Prepare the Goat Meat

    Wash the goat meat thoroughly with diluted saltwater twice, then drain and cut the meat into bite-sized pieces, placing them in a bowl.

    How to Clean Goat Meat, No Smell

    Method 1: Use White Wine

    • Use two ginger roots, peel and crush them. Then mix with 70ml of white wine to create a ginger wine mixture.
    • Rub this mixture thoroughly into the goat meat. Rinse with diluted saltwater and dry the meat with paper towels.

    Method 2: Use Vinegar

    • Dissolve 15 ml of rice vinegar in 1 liter of clean water, bring to a boil. Boil the goat meat in this mixture until it boils again, then remove it. At this point, the goat meat will have significantly reduced its smell.

    Tip: When grilling goat meat, do not cut it into pieces that are too small, as they will shrink and not taste good.

  • Prepare Other Ingredients

    Crush and finely chop garlic and slice lemongrass thinly, also finely chopped. Add to the bowl of goat meat.

    Then use a knife to cut off the ends of the okra, wash with water, and then cut in half. Remove the stem from the eggplant, wash it clean, and then slice into thin pieces about 2 – 3 cm thick.

    Tip:

    • You should soak the okra and eggplant in diluted saltwater before cutting to remove any pesticide residue on the vegetables.
    • You can grill other types of vegetables to make the dish more diverse and delicious.

  • Marinating goat meat

    Add 1 teaspoon of seasoning, 1/2 teaspoon of monosodium glutamate, 1 teaspoon of sugar, 1 teaspoon of cooking oil, 1 teaspoon of satay, and 1 teaspoon of oyster sauce to the bowl of goat meat.

    Continue by adding 1 teaspoon of chili sauce, about 2 – 3 large pieces of fermented tofu, and 1 teaspoon of fermented tofu sauce. Use chopsticks to mix well, then add eggplant and okra, and mix thoroughly. Marinate for about 30 minutes.

    Tip: If you have time, you should cover the bowl of goat meat with plastic wrap and put it in the refrigerator for about 1 – 2 hours for the meat to absorb the spices evenly, making it more delicious when grilled!

  • Grilling goat meat

    After marinating the meat, add 1 tablespoon of white sesame to the bowl of goat meat to enhance the aroma when grilling.

    Method 1: Grilling goat meat on charcoal

    Light the charcoal and wait for it to glow red, then place the goat meat and various vegetables on the grill, grilling for about 7 – 10 minutes and then serving on a plate.

    Method 2: Grilling goat meat on an electric stove

    Turn on the stove, place the goat meat and vegetables on it, and grill at a temperature of about 200 degrees Celsius for about 6 – 8 minutes and then serve on a plate.

    Tip:

    • During grilling, you need to pay attention to turn both sides of the goat meat and vegetables to ensure they cook evenly and do not burn.
    • You should choose to grill goat meat on charcoal as it will make the meat tastier and the skin crispier than on an electric stove!
    • If you grill the meat on charcoal, be careful not to let the fire get too big, as it will burn the food.
