Minced pork 200 gr Pork sausage 100 gr Minced lemongrass 2 stalks Minced ginger 3 slices Minced shallots 4 bulbs Chopped wood ear mushrooms 4 pieces Chopped betel leaves 8 pieces Snail meat 100 gr Fried shallots 2 tablespoons Seasoning a little (salt; sugar; monosodium glutamate; pepper) Lemongrass sticks 8 sticks Accompanying dish a little (vermicelli; fresh vegetables)

How to prepare Grilled Snails

  • Preparing the ingredients

    Soak 100g of snails in a bowl of water and add about 1 sliced chili pepper.

    Soak the snails for about 1 – 2 hours to let them release all the dirt and slime. Then wash the snails clean with water.

    After preparation, cut the snails into small cubes for the next step to mix with other ingredients.

    Tip: To eliminate the fishy smell of the snails, you should pay attention to remove the intestines, teeth, and head of the snails thoroughly, leaving only the snail meat, ensuring that the snails will no longer have a fishy smell when cooked. Rubbing with salt only helps to clean and remove the slime of the snails but does not completely eliminate the fishy smell.

  • Mix the ingredients

    First, you mix the following ingredients evenly: 200g ground pork, 100g cooked pork sausage, 2 chopped lemongrass stalks, 3 slices of chopped ginger, 5 chopped green onions, 4 chopped black fungus, 8 chopped wild betel leaves, and 1 tablespoon of fried onions.

    Next, add 100g of chopped snail meat, season with 1/2 spoon of sugar, 1/2 tablespoon of seasoning powder, 1 tablespoon of pepper, and 1 tablespoon of MSG (this can be adjusted according to your family’s taste). Then, use gloves and mix all the ingredients thoroughly.

    Note: If using dried black fungus, it should first be soaked in water for about 3 – 4 hours to allow the fungus to expand evenly. Avoid soaking the black fungus for too long or overnight, as it may produce harmful substances.

  • Shape the snail paste

    Wash the end of the lemongrass, then take a portion of the mixed ingredients and shape it onto 2/3 of the lemongrass stalk, leaving the end to hold while grilling and eating.

    Tip: Make sure to shape it tightly so that the snail meat does not fall off while grilling!

    The grilled snail cake is delicious with a unique combination of the crispy and chewy texture of the apple snail, minced pork, and wood ear mushrooms along with rich spices.

    You can eat the grilled snail cake with vermicelli, fresh vegetables, and Northern-style fish sauce to enhance the flavor, making it extremely suitable for transitional weather days.

How to choose fresh and delicious apple snails

  • Delicious apple snails are those that are still alive; when you touch the snail’s shell, if it retracts inside and closes up, then these are fresh snails.
  • You should choose snails that have a lot of meat, with the shell slightly opened to reveal some of the meat inside, and the shell should be intact without any chips or foul smell.

How to choose good quality raw sausage

  • You should choose raw sausage that has been carefully packaged in supermarkets. Raw sausages sold at markets are often unwrapped, which can lead to contamination from insects and dirt, not good for health if consumed.
  • You need to carefully observe the product packaging; a standard raw sausage package should have a clear brand name and specific production address. Additionally, you should pay attention to the ingredients of the raw sausage package as well as the expiration date.
