  • Do not buy shrimp that feel slimy when touched, and that have a curved body instead of straight.

  • Absolutely do not buy shrimp with spread tails because these are shrimp that have been chemically pumped or injected with water to make them plump.

How to choose good and safe pork

  • You can buy pre-ground pork from the market and then prepare it, but it will be difficult to check the quality of the meat. It is best to buy whole pieces of pork and grind or chop them yourself using a meat grinder to ensure safety and quality when using.

How to make Hue Filter Cake

  • Prepare the ingredients

    Shelled shrimp, remove the black vein, wash clean and dice. Chop the green onions, put them in a bowl, then heat 2 tablespoons of cooking oil and pour it into the bowl of green onions to make scallion oil.

    Peel and slice the red onion. Put a pan on the stove and add about 4 tablespoons of cooking oil, heat the oil, then add the red onion and stir quickly over medium heat until the onion is golden and crispy to make fried onion.

    • You count backward from the tail of the shrimp up to the second groove connecting the shell, pierce it with a toothpick and pull to remove the vein.

Finally, use one hand to firmly press and hold the tip of the tail, while the other hand holds the shrimp meat and pulls strongly outward.

  • Kneading the dough for the cake skin

    Add 500gr tapioca flour into a bowl, gradually pour in 200ml of hot water and mix well. To avoid burning your hands, wear plastic gloves and start kneading the dough, knead vigorously for about 5 minutes until the dough becomes a smooth, pliable mass that no longer sticks to your hands.

    Tip: To avoid making the dough too wet, you should add the hot water slowly. If the dough feels dry, add more water, and if it’s too wet, add more flour.

  • Making Bánh Bột Lọc

    Place a pan on the stove, add 1 tablespoon of cooking oil, and 1 tablespoon of minced garlic and sauté until fragrant. Next, add pork and shrimp and stir-fry quickly for 1 minute over medium heat.

    Then, season with 1 teaspoon of sugar, 1 tablespoon of fish sauce, 1/2 teaspoon of seasoning powder, and continue to stir-fry until the filling is completely cooked, then turn off the heat and let it cool.

    Take an adequate amount of dough and roll it into a ball, then flatten it. After that, add a little filling, fold it in half, and press the edges firmly to prevent the filling from falling out.

    Next, boil a pot of water and add the dumplings to cook over medium heat until they float to the surface and the outer layer becomes translucent, then remove and drain.

    Next, prepare the dipping fish sauce with the ratio: 1 bowl of filtered water, 1 tablespoon of fish sauce, 3 teaspoons of sugar, boil the mixture, let it cool, then add minced chili.

    Finally, place the bánh bột lọc on a plate, drizzle with scallion oil, fish sauce, and fried onions, and it’s ready to enjoy.
