How to prepare Japanese grilled eel rice with teriyaki sauce

  • Clean the eel to remove slime

    Purchase eel and clean off the slime, then use a knife to separate the meat from the bones and cut into bite-sized pieces.

    Place the eel meat into a bowl with 100ml of white wine and 100ml of vinegar. Use your hands to massage and rub the eel meat thoroughly to completely remove the slime and fishy smell. Then rinse well and pat dry the eel meat.

  • Make the sauce

    Add 70ml of mirin, 50ml of sake, and 1/4 spoon of ground pepper into a small pot placed on the stove, bring to a boil for 10 minutes to allow the alcohol to evaporate.
