Tips for choosing fresh and clean chicken:
- You should choose chickens weighing about 1.5 – 2 kg, with a compact and firm body, and the breast should not be too large.
- Fresh chicken will have a rosy, bright color; when buying, gently touch the chicken meat with your hand; if it has high elasticity, then it is good chicken.
- You should note that the chicken neck must have a shiny color without bruises, or tiny red spots. If the skin of the neck has abnormal colors, it indicates the chicken is sick, and you should not buy it.

Mix the marinade
Take a large plate and add 2 tablespoons of seasoning, 1/2 tablespoon of turmeric powder, 1 tablespoon of minced garlic, 2 tablespoons of sugar, 1 tablespoon of monosodium glutamate, 1 tablespoon of salt, 1 tablespoon of pepper, and 2 tablespoons of fish sauce, then mix all the ingredients together well.
