How to make Macaron without an oven

  • Mix the cake batter

    Sift 70gr almond flour, 70gr powdered sugar into a bowl, then mix well for the mixture to combine.

  • Whip the egg whites

    Put 2 egg whites into a bowl, use a mixer to beat on low speed until the eggs form bubbles like soap.

    Divide 230g of powdered sugar into 3 portions, gradually add each portion one at a time and beat until dissolved. Beat each portion of sugar for about 30 seconds on low speed before adding the next portion.

    When adding the last portion of sugar, add a little food coloring, then turn the mixer to high speed, beating the egg whites until they are fluffy, with a cream-like texture, the mixture is sticky, shiny, and smooth. Lift the whisk to create a soft peak to achieve the desired consistency.

    Note:

    • Divide the sugar into 2 or 3 portions and add it slowly a little at a time. Avoid adding all at once.
    • The egg whites should be at room temperature before whipping.

  • Mix the flour with the egg whites

    Add the dry flour mixture to the egg whites in the bowl and mix well.

    To keep the surface of the cake smooth and not pockmarked, use a flat spatula to spread and press the batter against the sides of the bowl several times to break up the large air bubbles inside the batter. Mix until the mixture is smooth, sticky, and when you lift the batter it flows like a ribbon (Ribbon Stage) is achieved.

  • Shape the cake

    Take a small amount of cake batter mixed with a little purple food coloring and put it into a piping bag.

    The remaining batter should also be placed in a piping bag, then squeeze it onto the tray to form a circular shape. Next, use the purple cream to decorate the top of the cake to finish.

    Once shaped, gently tap the tray on the table a few times to even out the batter. Let it sit for 40 – 60 minutes at room temperature until the surface is dry, and when touched, it does not stick.

  • Bake the cake

    Line with parchment paper and place the cakes in the pot, cover the lid, and bake on low heat for about 10 minutes until done.

    The macaron has a soft, fluffy shell that melts in the mouth, with a sweet and nutty almond flavor, extremely delicious.
