How to choose good pork belly
- You should choose pork belly with a balanced fat-to-meat ratio, with the outer skin being thick, and the fat layer about 1.5 – 2cm. The meat should be tightly attached to the fat, with a light red or bright pink color, and the outer membrane should be dry.
- It should have a distinctive smell, with no strange odor. When you press it with your hand, if the meat bounces back quickly, it is fresh meat.
- You should not choose a piece of meat with a very thick layer of fat and skin on the outside, as that indicates it is from a pig that has been raised for a long time.

Mirin
It is a special seasoning rice wine used to prepare dishes in Japanese cuisine. Mirin is essentially Japanese rice wine but has a lower alcohol content and a higher sugar content than regular rice wine.

Prepare the meat

Chives are divided in half, washed clean with water, one part is chopped finely, the remaining part is smashed.
Garlic is peeled, washed clean, and then chopped finely. Ginger is washed clean and sliced into thin pieces.

Marinating the meat
Take a bowl, add 1 teaspoon of miso sauce, 1 teaspoon of honey, 1 tablespoon of rice vinegar, 2 tablespoons of mirin, and mix well.
Next, add the pork belly and mix evenly, then marinate for about 30 minutes.

Cooking the sauce
Place a pot on the stove, turn on the heat moderately to warm the pot. Then, gradually add 125ml of soy sauce, 125gr of brown sugar, 8 tablespoons of mirin, 70ml of sake, 3 slices of ginger, garlic, and smashed green onions into the pot, then mix well and let it boil for about 5 minutes.
Turn off the heat, strain through a sieve to keep the liquid and discard the solids.

Sauté the meat
Place a pan on the stove, turn on the moderate heat to warm the pan, then add 1 tablespoon of cooking oil and all the marinated pork belly into it. Sauté for about 3 – 4 minutes and turn the meat frequently to cook evenly.
When the sauce has reduced, add the chopped green onions. That’s it.
