How to make red velvet cookies

Mix the lemon milk mixture
Add 10ml of lemon juice, 20g of fresh milk, 5g of vanilla, and 10ml of red food coloring into a bowl, then stir well.

Whip the mixture
Add 75g of unsalted butter and 25g of cream cheese into a bowl and use a mixer at low speed. Sift 160g of sugar into the bowl, then continue mixing at low speed until the mixture is smooth.
Note: Unsalted butter and cream cheese should be softened at room temperature.Next, gradually add 2 eggs into the bowl and mix at low speed until the mixture is smooth and light yellow in color. Finally, while the mixer is on low speed, slowly pour the lemon milk mixture in and mix well.

Mix the flour
In a new bowl, add 240g of flour, 12g of cocoa powder, 10g of coffee powder, 30g of baking powder, and 5g of baking soda, then mix well and divide the flour into 2 portions. Sift each portion of flour into the butter mixture and mix at low speed until just combined.

Place the mixed dough into a sealed bag and freeze for 2 – 3 hours until the dough hardens. Then, divide the dough into equal parts, each about 20g, roll them into balls and coat evenly with flour.

Preheat the oven to 175 degrees Celsius, both top and bottom heat for 10 minutes.
Bake the cookies at 175 degrees Celsius for about 12 – 13 minutes.
