Ingredients for Marinated Duck Feet Serves 3 people
Duck feet 500 g Fish sauce 240 ml Lemongrass 70 g Chili 30 g Ginger 20 g Vinegar 200 ml Kumquat 5 fruits White wine 20 ml Sugar 160 g Filtered water 400 ml
Note: After cooking, you should marinate the duck feet for 2-3 days before use.
- You should choose duck feet with light yellow skin, not too white, and avoid those with dark yellow skin as they may have been preserved for a long time or dyed.
- Observe the duck feet to ensure they have intact skin, no discoloration, spots, or bruises; if they do, do not buy them.
- Pick up the duck feet, and if they feel elastic when gently shaken, choose those; they usually have thicker and fresher skin compared to those that are no longer elastic.
How to Prepare Marinated Duck Feet with Lemongrass and Chili
-
Prepare the Duck Feet
After purchasing the duck feet, use a knife to cut off the nails, peel off any remaining skin, and then rub with salt thoroughly, washing clean with water.
Next, soak the duck feet in a mixture of crushed ginger and vinegar or white wine for about 15 minutes; this method helps effectively eliminate any unpleasant odors.
Rinse with water 1 – 2 times until completely clean and let them drain.
Tip: You can also add a bit of salt, sliced chili, and vinegar, then mix well with your hands before rinsing thoroughly with water. -
Boil the Duck Feet
Add 500g of duck feet, 20g of lemongrass, and 20g of crushed ginger into a pot. Then add 20ml of white wine and 400ml of water, and boil for about 5 minutes.
After that, take the duck feet out, soak them in cold water mixed with a little salt for about 10 minutes, then drain and place them in the refrigerator for about 30 minutes; this method helps the duck feet become crunchier and more delicious when eaten.
Tip:- You should pay attention to skimming the foam and turning the duck feet during boiling to ensure they cook evenly!
- You can add a bit of turmeric powder to the boiling water to give the duck feet a nicer color, and this is also an effective way to eliminate the unpleasant smell of the duck feet.
- As soon as the duck feet are done, remove them immediately to prevent them from becoming soft, which would lose their natural chewiness and crunchiness.
- To prevent the skin from cracking, soak the duck feet in an ice water bath for about 5 minutes after boiling.
-
Make lemongrass chili pickling liquid
Put 160g of sugar, 200ml of vinegar, 240ml of fish sauce, and 400ml of water into a pan. Bring to a boil, then turn off the heat and let it cool.
-
Soak duck feet
Prepare a plastic jar, layer the duck feet, lemongrass, chili, and sliced kumquat inside, then pour the lemongrass chili pickling mixture into the jar, sealing it tightly. Place in the refrigerator for about 2 – 3 days for the duck feet to absorb the spices.
Tip:- Before sealing, you should use a rack to weigh down the duck feet to prevent them from floating above the pickling liquid, which would prevent them from absorbing the spices and becoming crispy and delicious.
- Depending on your family’s taste, you can adjust the amount of kumquat and chili to suit your preference!
-
Final product
The duck feet are chewy and crispy, blended with the sour, spicy, and sweet flavors from the lemongrass chili pickling liquid, providing you with an irresistible snack that stimulates your appetite.
You can enjoy the lemongrass chili pickled duck feet with fresh herbs, cucumber, pickled white radish, salad,…
Storage tips:
- When arranging duck feet in the jar, you need to alternate the types of ingredients with each other; this method helps the duck feet not to become bitter or slimy, causing them to spoil quickly.
- You should soak the duck feet in a glass jar to keep the marinated duck feet with lemongrass and chili flavorful and last longer.
- Before soaking, you must rinse the glass jar with hot water and dry it thoroughly.
- You should keep the jar of duck feet marinated with lemongrass and chili in the refrigerator’s cool compartment and when eating, use clean and dry chopsticks to take out, then immediately return it to the refrigerator to prevent the duck feet from spoiling.
