How to choose fresh ingredients
Tips for choosing pig stomach:
- Choose pig stomach that is bright in color and thick.
- Gently press the stomach with your finger; if it does not deform and is elastic, it is good.
- Check the inside of the stomach; if it has a lot of liquid and no hard parts or hard grains inside, it is a good stomach.
Tips for choosing starfruit:
- Do not buy overripe starfruit.
- Instead, choose green, fresh starfruit that is crispy and not bruised on the edges.
How to prepare Starfruit salad with pig’s stomach – pig’s stomach salad

Prepare the pig’s stomach
Turn the pig’s stomach inside out and rinse it directly with water. Then add salt and scrub vigorously to continue cleaning the stomach, ensuring all the slime is removed. After that, rinse it thoroughly with water.
Next, squeeze a few pieces of lemon and rub it on the stomach for 10 minutes to clean it again. Then rinse it thoroughly with water.
Blanch the pig’s stomach in boiling water with salt, vinegar, and ginger wine (if available). Scrape off the white membranes sticking to the stomach. Rinse the stomach again and let it drain.
Boil the stomach for the salad by placing a pot of water on the stove, adding 1 tablespoon of white wine, 1 teaspoon of salt, 1 tablespoon of vinegar, and 1/2 piece of ginger, then add the pig’s stomach to boil.
After the stomach is cooked, remove it and place it in a bowl of ice water that has been prepared in advance to keep the pig’s stomach crunchy and white, and to cool it down faster.
Wait for the stomach to cool, then remove it to drain, cut the stomach in half, and then cut it into small thin pieces for the salad as shown in the image below.

Prepare other ingredients
Wash the starfruit and cut it into rectangular pieces or star-shaped slices about 3mm thick. Wash the carrot, peel it, and cut it into long strips.
Peel the onion, slice it thinly about 0.3cm, wash the Vietnamese coriander, and chop it finely. Peel the garlic and then mince it, and do the same with 2 chili peppers.

Make the dressing for the salad
Take a bowl and add 2 tablespoons of sugar, 3 tablespoons of fish sauce, 2 tablespoons of lime juice, 1/3 tablespoon of seasoning powder, minced garlic, and minced chili, then stir well until the mixture is fully dissolved.

Mixing the salad
You put the pig’s stomach into a large bowl, then add the starfruit, carrot, onion, and Vietnamese coriander that you have prepared, and pour the prepared salad dressing over to mix all these ingredients together. Presenting the dish on a plate means you have completed it.

Final product
The crunchy pig’s stomach blends with the sour taste of green starfruit, the crisp and fragrant onion and carrot combined with the spiciness of chili will create a refreshing and incredibly appealing dish for your family as summer arrives.
