How to choose fresh and delicious chicken meat

Prepare the chicken
To save time, you can ask the seller to clean the chicken for you. When you get home, you just need to eliminate the chicken’s odor by rubbing it with 1/2 crushed ginger and 2 tablespoons of white wine.
Then, let it sit for about 20 – 30 minutes, then rinse the chicken thoroughly with water and let it drain.
How to clean chicken without odor- Method 1: Rub the chicken meat with a mixture of salt and vinegar in a ratio of 2:1 for about 5 minutes, then rinse with clean water several times.
- Method 2: You can also replace vinegar with lemon; just rub a few slices of lemon with a little salt on the chicken meat, then rinse with clean water.

Prepare other ingredients
Cut off the leaves of the lemongrass, then crush the part of the lemongrass stalk. Use a tablespoon to scrape off the skin of the leftover 1/2 ginger, wash it clean, and slice it.
After peeling, slice 4 shallots thinly, and chop the remaining 2 shallots using a knife. Wash the lime leaves and let them drain.
Next, add the chopped shallots, 3 green chili peppers, 2 spoons of salt, and 1/2 teaspoon of sugar powder into a mortar and pound them well.
Then, use your hands to rub the mixture of ingredients all over the chicken and marinate the chicken for about 30 minutes to allow the chicken to absorb the spices evenly.

Steamed Chicken
Evenly sprinkle 400g of coarse salt, 6 crushed lemongrass stalks, 1/2 sliced ginger, 4 sliced shallots, 10 torn kaffir lime leaves, 1 tablespoon of whole peppercorns, and the marinated chicken into the rice cooker.
Next, add 5 – 6 whole kaffir lime leaves on top of the chicken, close the lid of the rice cooker, plug it in, select the cooking mode, and steam the chicken for about 40 – 45 minutes until the chicken is cooked through and can be easily pierced with a chopstick.
Then, switch to the keep warm mode and let the chicken stay in the rice cooker in that mode for another 15 minutes, after which you can take the chicken out, use scissors to cut it into bite-sized pieces, and it’s done.
