Clean the frog and then rub the frog meat with salt and vinegar to eliminate the fishy smell as well as the sliminess of the frog. Mix well and cut into bite-sized pieces. Then rinse the frog again and let it drain.
Wash the garlic and chili, then mince them finely.
How to clean frog without odor:
Add cornstarch to the frog so that when frying, the frog will be crispier; mix the frog and flour together evenly. You can place the frog and cornstarch in a container, close the lid, and shake well for the cornstarch to stick evenly to the frog meat.
Heat a pan with oil over medium heat; when the oil is hot, add the frogs that were coated with cornstarch to fry until crispy. Fry the frogs until they turn a golden color and are crispy and visually appealing. Then, remove the frog meat and let it drain off the oil.
Note: Keep the heat at medium when frying the frogs to ensure the meat cooks evenly from the inside and remains crispy on the outside. Avoid using too high a heat, as this can cause the frogs to burn easily and not cook properly from the inside.
After frying the frogs, drain the oil leaving about a tablespoon of oil in the pan, add minced garlic and sauté until fragrant; when the garlic turns golden, add the finely chopped mild chili.
Once the garlic and chili are fragrant and golden, add the previously fried frogs and stir well to ensure everything is evenly coated with the garlic and chili, creating an enticing aroma for the dish.
After frying the frog until crispy, stir-fry it evenly with garlic and chili, then lower the heat and add the roasted salt powder last. Mix all the ingredients well to absorb the seasoning and plate it up.
Tip: If you can’t find pre-packaged roasted salt powder, you can make it at home with the following simple method:

To choose fresh frog meat, you can follow these steps:
After purchasing, wash the frog meat with salt to reduce the odor, then let it drain.
Step 1: Wash the frog meat
Before preparation, you need to wash the frog meat with cold water to remove dirt and impurities on the surface of the meat.
Step 2: Peel the skin and white membrane
After washing, you need to peel the skin and the white membrane surrounding the frog meat. You can use a sharp knife to cut each layer of the white membrane and gradually peel until it is all removed.
Step 3: Cut the meat
After peeling the skin and white membrane, cut the frog meat into suitable pieces or according to the size required by the recipe.
Step 4: Soak in saltwater
You should soak the frog meat in saltwater for about 15-20 minutes to remove the odor and help the meat become softer.
Step 5: Rinse the meat
After soaking in saltwater, rinse the frog meat with cold water to remove the saltwater and dirt.
After completing the above steps, you have finished preparing the frog meat and can use it for cooking. Note that the frog meat needs to be cooked thoroughly to ensure food safety.
Prepare a blender, first adding 1 cup of bread crumbs, 100g of dried shrimp, 100g of cashews, and 100g of pork floss to blend until smooth. Next, add seasonings like 1/2 teaspoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, 2 tablespoons of sugar, 1 tablespoon of chili powder, and a little five-spice powder to blend evenly a second time.
Once the mixture is blended smoothly, transfer it to a sealed container to use whenever you’re preparing a dish, avoiding leaving it out to prevent moisture damage.
Add 200ml of cooking oil to a pan, turn on the stove to low heat, and when the oil is hot, add the frogs to fry. Fry until the surface of the meat turns golden, then remove and drain the oil.
Next, use another pan, turn on the stove to low heat, add the fried frogs, and sprinkle in 3 – 4 tablespoons of prepared salt powder, stirring evenly until the salt adheres to the frog meat.
The frog meat after frying is not dry, with a crispy outside and tender inside. The salted flour has a nutty aroma, creating a special flavor for this dish.
