How to Prepare Stir-fried Squid with Water Spinach

  • Prepare the Ingredients

    After purchasing the water spinach, you should remove any wilted leaves, then cut the spinach into pieces about 2 finger joints long and wash thoroughly multiple times with water. Finally, you drain the water spinach in a basket.

    For the squid, you separate the head, removing the ink sac and the mucous membrane at the end of the squid’s head. Then you pull out the backbone along the squid’s back and gently peel off the purple outer skin, then rinse well and let it drain.

    Next, you cut the squid into bite-sized rings and place them in a bowl. Peel the garlic and chop it finely.

  • Marinate the Squid

    Next, add to the bowl of prepared squid 1 teaspoon of chili paste, 1/2 teaspoon of sugar, 1/2 teaspoon of seasoning powder, and 1/2 teaspoon of monosodium glutamate, then use chopsticks to mix the seasonings evenly into the squid. The marinating time for the squid is about 20 minutes.

    First, place a pan on the stove and add 1 tablespoon of cooking oil. When the oil is hot, add garlic to sauté until fragrant, then add the marinated squid.

    Using chopsticks, stir briefly for about 30 seconds until the squid firms up, then add the water spinach. Finally, season with 1/2 teaspoon of seasoning powder and stir-fry on high heat until the water spinach is cooked, then taste and adjust the seasoning to your liking before turning off the stove.

    After buying, you pick the stems and tips of the water spinach, then wash them clean and let them drain.

    For the dried shrimp, grind them finely. Next, chop the garlic and shallots finely.

    Then, gradually add 2 teaspoons of mustard along with 1 tablespoon of chopped garlic and 1 tablespoon of chopped shallots to the dried shrimp, mixing well to let the shrimp absorb the seasoning.

  • Stir-frying the ingredients

    Place a pan on the stove, add 5 tablespoons of cooking oil. Wait for the oil to heat up, then add the remaining minced garlic and shallots, sautéing until fragrant.

    Next, add the marinated dried shrimp and stir-fry for 1 – 2 minutes until the shrimp is cooked.

    Then, add the squid, stirring well. When the squid is cooked, sprinkle a little pepper on top.

    Finally, add the water spinach, using chopsticks to mix well so that the vegetables absorb the seasoning. Stir-fry the vegetables for another 1 – 2 minutes, then add 1/2 teaspoon of seasoning, stir everything once more and turn off the stove.

    • Fresh squid will have a shiny color. The brown part will be dark brown, while the squid’s body will be milky white.
    • When you touch the body of the squid, you will feel the firm flesh and high elasticity.
    • For fresh squid, the color of the squid’s eyes is clear, not bulging out. Squid that is not fresh will have eyes that have turned cloudy, sometimes with discharge.
    • In addition, fresh squid has the head and tentacles tightly attached to each other, securely. Squid that is not fresh will often have soft and easily separable parts.

    How to choose fresh water spinach

    • Prefer to choose bunches of water spinach with stems that are only as thick as a chopstick, avoiding those with unusually large stems. The tips should be small and look slightly tough.
    • It is recommended to eat water spinach in season, during summer from April to June, when water spinach is the most delicious.
    • Avoid choosing water spinach that looks too lush, when breaking the stem it feels very crunchy and the leaves are dark green.

    How to properly prepare squid

    • Step 1: Use one hand to hold the squid’s body, and the other hand to hold the squid’s head, gently pull up and carefully remove the ink sac.
    • Step 2: Use a knife to cut off the eyes and beak of the squid.
    • Step 3: Use a knife to make a light cut along the head of the squid’s body. One hand holds tightly to the squid’s flesh, while the other hand securely grips the squid’s skin and pulls it up.
