How to choose minced pork
- You should choose pieces of pork that have both lean and fat for a tastier soup.
- The meat should have a dry membrane, a bright red color, a slightly firm surface, and tender fibers.
- The meat should have a natural smell and no strange odors. When touched, it should feel elastic.
- You should choose pork with a clear origin from reputable, quality establishments.
How to choose fresh shrimp
- When choosing shrimp, you should select those with a transparent outer shell, with a slight smell of seawater.
- Fresh shrimp usually have their tails curled together, with a slightly curved and firm body, and the head and body of the shrimp are tightly attached.
- You should not buy shrimp that are slimy and have inconsistent colors.
How to make Spicy Sauce Dumplings
-
Prepare the ingredients
You can choose to buy pre-minced pork or buy a whole piece of pork to mince or grind at home using a meat grinder to ensure hygiene.
Wash the shrimp, cut off the head and tail, peel the shell, remove the back vein, and cut into small cubes or mince finely.
Wash the chives and chop them finely.
-
Marinate the wonton filling
Put into a bowl in order: minced pork, shrimp, chives, 15g sugar, 3g salt and pepper, 15ml soy sauce, 15ml sesame oil, 15ml water, 15ml chili oil. Mix all together and marinate for 20 minutes.
-
Wrap the wonton filling
First, place a small enough amount in the center of the wonton wrapper. Brush a thin layer of oil along the edge of the wrapper.
Fold the wonton wrapper in half to form a rectangle, gently pressing the edge to secure the filling.
Brush a thin layer of oil on one corner of the rectangle just formed, then use your hands to pinch the two pointed corners together so that the two edges overlap, completing the wonton shape.
Continue this process until all the filling is used!
How to wrap beautiful, firm wontons that won’t burst
- When wrapping wontons, do not take all the wrappers out at once as exposure to air will dry them out and make them difficult to wrap. Take one piece out of the plastic wrap at a time and wrap it as you go.
- It is necessary to apply a little water to dissolve the flour that coats the wonton wrapper so that the wrappers do not stick together during storage if not used immediately.
- Use water to moisten the edges of the wrapper to create adhesion and connect the edges together, preventing the wontons from bursting and the filling from spilling out during cooking.

Then gradually add 15g of sugar, 15ml of vinegar, 15ml of soy sauce, 15ml of chili oil, 5g of chili powder, 15g of satay chili into the pan, stir the mixture over medium heat until the sauce mixture boils, then turn off the heat.
-
Boiling wontons
Place a pot on the stove, add about 1 – 1.5 liters of water along with 1 tablespoon of cooking oil into the pot, turn on the stove to medium heat. Heat until the water in the pot boils, then add the wontons and boil for about 3 – 5 minutes, then remove to a plate.
