How to make Sweet Spring Rolls

Mix the batter for the rice paper
Crack 2 eggs into a bowl, then add 2 teaspoons of sugar (you can adjust according to your taste), use an egg whisk or a whisk to mix the eggs and sugar until well combined.
Next, add rice flour and wheat flour into the egg mixture and mix well to combine the egg and flour.
Then, gradually add water into the mixture while stirring to dissolve the flour. Continue to whisk until the mixture is smooth and runny like yogurt.
Note
- You should not whisk the eggs and sugar too long, this rice paper does not require much fluffiness like other types of cakes.
- The thickness/runny nature of the batter will determine the fluffiness/softness of the rice paper, so you can consider adjusting it to suit your taste.
- When whisking the batter, you should whisk from the bottom up to prevent the batter from splattering, which also helps make the batter smoother.

Wrapping the rice paper
Prepare a small non-stick pan, add a small amount of cooking oil just enough to create a thin shiny layer (too much oil will make the rice paper soft and greasy).
When the pan starts to heat up, scoop out a ladle of the batter and pour it into the pan. You should add the batter slowly while simultaneously rotating the pan so that the batter spreads evenly across the surface.
The action of wrapping the rice paper is similar to how to make bánh xèo. After wrapping, cook on medium heat for about 1 – 2 minutes until the rice paper is cooked evenly, then use a spatula or chopsticks to flip the other side of the rice paper, and continue cooking for another 1 – 2 minutes until it’s done.
Repeat the above steps until the batter is finished.
Tip for you
- You should not turn the heat too high, as the batter contains sugar; if cooked on high heat, the rice paper may burn and lose its taste.
- If you’re short on time, you can buy pre-made Bò bía wrappers available in the market. However, making them yourself ensures better quality and hygiene.

Making spring rolls
This step is very simple, you just need to stack 2 pieces of rice paper that you just made on top of each other, spread them out on a cutting board or plate, then gradually add shredded coconut, a little malt candy, and sprinkle some roasted black sesame seeds on top.
Then fold the two ends so that the filling inside does not fall out, and roll the spring roll up to complete.
Tip for you
- If the layers of the rice paper do not stick together, you can brush a little water to make a binding agent. However, do not use too much, as using too much will make the rolls soggy and not tasty anymore.
- When rolling, you should press firmly so that the ingredients stick together, to avoid spilling when using it.
