Dried shiitake mushrooms 200 g Chicken breast 300 g Garlic 2 cloves Ginger 10 g Oyster sauce 3 tablespoons Cornstarch 1 tablespoon Green onion 1 stalk Fresh shiitake mushrooms 100 g Shaoxing wine 2 tablespoons

How to choose chicken breast

  • Good chicken will have thin, smooth skin, light yellow color, and the breast part will be a bit darker yellow. Choose chicken meat that looks fresh, rosy-red, with no foul smell or antibiotic odor, and the skin should not have any bruises or blood clots.
  • Avoid buying chicken breast that has a lot of white tendons because this indicates that the chicken breast has more fat and less protein, which significantly affects the quality of the meat, making it hard to absorb sauces and prone to spoilage when cooked.

How to choose shiitake mushrooms

  • For fresh mushrooms, you should buy those with bright colors, a characteristic aroma, and avoid choosing mushrooms that are bruised or have a rotten smell. If the cut oozes a milky white substance, it is a sign of poisonous mushrooms. Avoid mushrooms with dark spots or wrinkles on the cap, and do not choose slimy mushrooms. Fresh mushrooms will have a thin filmy layer like paper on them. Choose mushrooms with a firm stem, uniform color, and if the mushrooms have opened, the gills should be evenly arranged, beautiful, and dry.
  • When choosing fresh shiitake mushrooms, you should select those with moderate caps, tightly curled, and slightly yellowish-brown. If the mushrooms are dark brown, it’s best not to buy them, as they may be poisonous.
  • How to choose delicious dried mushrooms: select those that are firm, not broken, bright in color, and without white mold spots. Choose a reputable source to buy dried mushrooms to ensure safety.

Note:

  • If fresh shiitake mushrooms are not available, you can substitute them with other types of mushrooms like straw mushrooms, oyster mushrooms, etc.
  • Thieu Hung wine is a famous type of wine in Shanghai, with a sweet taste and strong, fragrant flavor, and can be omitted if not available.

How to prepare Stir-fried Chicken with Shiitake Mushrooms

  • Prepare the chicken

    • Wash the chicken breast thoroughly and cut it into bite-sized pieces according to your taste.
    • Marinate the chicken breast with 1 teaspoon of seasoning, 1 teaspoon of fish sauce, and a little pepper. You can adjust the seasonings to suit your family’s taste.
    • Let the chicken marinate for about 15 – 30 minutes to absorb the flavors.

  • Prepare the other ingredients

    • Clean and finely chop the ginger and garlic.
    • Soak the dried shiitake mushrooms in water to clean off the dirt, then put them in a bowl of hot water with a little salt and soak them until they soften for about 30 minutes, then remove the mushrooms and squeeze out the excess water.
    • Remove the mushrooms and cut off the stems. The stems are very tough, and if left on, they will not taste good when cooking. Rinse the mushrooms several times and gently squeeze out the water by hand after each rinse. Then cut the mushrooms in half for easier eating.
    • Fresh mushrooms should be washed and cut into bite-sized pieces.
    To soak the mushrooms faster, use warm or hot water. Add a little salt to the soaking water. When soaking, make sure the mushroom stems are submerged in the water. This method will help you easily remove dirt from the shiitake mushrooms.

  • Stir-fried chicken

    • Heat a pan over high heat, add about 2 tablespoons of cooking oil, then add minced garlic and ginger to sauté for 30 seconds.
    • Add the chicken and stir-fry until slightly cooked, then add fresh mushrooms and stir-fry for another 2 – 3 minutes.
    • Next, add the soaked and prepared dried mushrooms to stir-fry.
    • Season with 3 tablespoons of soy sauce, 3 tablespoons of oyster sauce, 2 tablespoons of Shaoxing wine, and cornstarch water into the pan.
    • Stir well to ensure the chicken and mushrooms are evenly coated with the spices, stir-fry the chicken with mushrooms for about 2 – 3 minutes until cooked through, then turn off the heat.
    • Add some onions to the stir-fried chicken and turn off the heat.

  • Dry or fresh shiitake mushrooms (Lentinula edodes) are low in calories and very rich in fiber, vitamin B, and some minerals beneficial for the body.
  • Shiitake mushrooms provide many health benefits such as: good for cardiovascular health, cancer prevention, antibacterial properties, antioxidant effects, helping bones stay strong, and also treating acne and improving skin.

Note:

  • After eating mushrooms, you should not immediately drink cold beverages like iced tea or iced coffee, as mushrooms have a cool nature, so drinking cold drinks right after can lead to stomach discomfort.
  • You should not use aluminum utensils to stir-fry mushrooms because the active substances in mushrooms will react with aluminum pots, causing the mushrooms to turn dark.
  • Tip to remove the smell of shiitake mushrooms: Soak dry shiitake mushrooms to expand, rinse the mushrooms several times and squeeze them with water. Then, boil water, add the mushrooms, and cook for about 2 minutes with a little cooking wine. Cooking for 15 minutes until the mushrooms are completely soft will help reduce the smell of the mushrooms.
