How to choose good pork

  • Color: fresh pork will have a dry membrane, bright red color, and a slightly firm surface. When cut, the meat will show a bright pink cut surface, with white-pink skin, and softness. The fat should be bright in color, firm, and have a characteristic aroma.
  • Elasticity: press your finger into the meat and then release. If it does not leave a fingerprint, the meat quickly bounces back and has a pinkish-red color, then it is fresh meat; if it leaves a fingerprint, the meat is spoiled and should not be purchased.
  • For this dish, you can buy raw meat and then mince it finely, or buy pre-minced meat to prepare.
  • Alternatively, you can also use pork belly cut into small pieces for this dish.

  • Prepare the ingredients

    After purchasing, wash the lemongrass and chop it finely. Peel and mince the shallots and garlic. Cut the bird’s eye chili into small pieces. Chop the green onions finely.

    For the pork, you can buy pre-ground pork or buy a whole piece of pork and cut it into small pieces, then grind it finely yourself.

  • Marinate the pork

    After mincing the pork, marinate it with a little sugar, fish sauce, and pepper to absorb the seasoning for about 30 minutes.

  • Stir-fry meat with shrimp paste

    Place a pan on the stove, add cooking oil. When the oil is hot, sauté the minced onion, garlic, lemongrass, and chili. Once the onion, garlic, lemongrass, and chili turn golden, add the marinated meat and stir quickly over high heat.

    After the meat is cooked and firm, add 50g of shrimp paste, 1 tablespoon of fish sauce, and 1 tablespoon of sugar, stirring well for an additional 5 minutes until the ingredients are well combined.

    After stir-frying for another 5 minutes, add the chopped green onions and stir well. Turn off the heat. Decorate to make it visually appealing, and you’re done.

    The shrimp paste stir-fried meat is delicious, rich in flavor, not too dry or salty. You can enjoy it with white rice and a bit of boiled vegetables to make the dish more appealing.

How to preserve and shelf life

  • You need to tightly close the lid of the shrimp paste jar to prevent air from getting in; the shrimp paste will ferment quickly and won’t spoil.
  • Store in a normal temperature environment.
  • Can be kept in the refrigerator, with a shelf life of 6 – 12 months.
  • It is recommended to use a clean spoon and dry chopsticks to scoop into a bowl before mixing spices to prevent the paste from spoiling quickly.
  • If the paste emits an odor, changes color, and has liquid on the surface in the jar, it should no longer be used!
