You can buy minced pork or buy pork to mince at home!
How to choose good pork:

How to make Meat Rolled Eggs

Prepare the ingredients
Shallots peeled, washed clean, then minced. Green onions cut off the roots, washed clean, cut into sections.
Soak dried shiitake mushrooms until they expand evenly, then drain, and also cut or mince the mushrooms.
Tip for quickly softening dried shiitake mushrooms, removing sand:
Soak dried shiitake mushrooms in water overnight for about 8 hours for the mushrooms to expand. It is best to soak the root and stem of the mushrooms touching the water surface, with the mushroom caps on top. Continue to rinse the mushrooms 2 – 3 times and squeeze out the water after each rinse.
Alternatively, you can soak dried shiitake mushrooms in warm water with a little salt for about 30 minutes for them to expand evenly. Then remove and rinse with water to remove all residue and dirt.
Add the minced shiitake mushrooms to the minced meat. Season with 1/4 teaspoon of seasoning powder and salt powder. Add 1/2 teaspoon of soy sauce and mix well, marinating for 5 – 10 minutes for the meat to absorb the spices.

Mix the filling
Place a pan on the stove, wait for the pan to heat up, add 1/2 tablespoon of cooking oil, and sauté the minced shallots until fragrant.
When the shallots are fragrant, add the marinated minced meat from earlier and sauté until cooked.
Transfer the sautéed meat to a bowl, add the green onions and coriander. Next, crack 2 eggs into the mixture and stir everything together to make the filling.
Tip for you: you can add a little tapioca starch to make it easier to roll the eggs when frying.Take 2 separate eggs, crack each egg into a bowl, and beat the eggs to prepare for the outer layer later.

Make Egg Roll
Turn on the stove with a new pan, add a little cooking oil, and wait for the oil to heat up. Then add the meat filling that has been mixed with the eggs into the frying pan.
Fry until the eggs are golden brown, then gently push the egg mixture up with a spatula and roll it up.
Note: When frying the eggs, keep the heat medium, do not let it be too high, as the eggs can easily burn. If the heat is too low, it will be hard to roll the eggs.Next, add a little more cooking oil. Pour the 2 eggs that were cracked separately into the pan, and continue to roll the eggs to create the outer layer.
