How to Choose Fresh Eel

  • You should choose eels that are of moderate length and have two distinct colors, with the belly being yellow and the back being black, as these eels are usually caught in channels and ponds, so their meat will be fragrant, fresh, and firmer.
  • Note that eels that are too small won’t taste good, and eels that are too large with a black belly are farmed eels, so their meat tends to be soft and won’t taste good.

How to Cook Salted Eel

  • Prepare the Eel

    After purchasing the eel, you clean the slime by rubbing the entire body of the eel with salt and then rinsing it with lemon juice once, and finally washing it clean with water 2 – 3 more times.

    Tip: You can put the eel in warm water for about 10 minutes to help reduce the slime.

    Next, you make cuts into the body of the eel every 4 – 5 cm apart so that when the eel is cooked with salt, it will cook faster.

    You prepare a clay pot, lining the bottom with coarse salt and then placing cut lemongrass on top, add the eel into the pot, then add green chili and thinly sliced shallots, cover the lid and place it on the stove to steam on low heat until the eel is cooked and it’s done.
