How to make Hue Rice Cake

Prepare the mold
First, use a brush to spread a little cooking oil all over the cake mold to prevent sticking.

Mix the cold flour
Next, add 222g of rice flour, 70g of mung bean flour, 1/2 teaspoon of salt, and 375ml of warm water into a bowl, then use chopsticks to stir until the flour dissolves and the mixture is smooth.

Stir the hot flour
Place a pot on the stove, add 1375ml of water and bring to a boil; once the water is boiling, turn off the heat. Then, slowly add the rice flour mixture while stirring until the mixture is smooth.
Next, sift in an additional 120g of tapioca flour and continue stirring until the mixture is thick, sticky, and smooth.

Steaming the cake
Next, scoop the batter into a greased mold, then place the mold into the steamer. Cover the pot with a cloth, close the lid tightly, and steam over medium heat for about 15 minutes.

Making the dipping sauce
Add 1 tablespoon of dipping sauce, 2 tablespoons of water into a bowl and stir well. Cover tightly with plastic wrap and heat in the microwave for about 20 seconds.
Finally, add 2 tablespoons of minced garlic, 1 teaspoon of minced chili, the juice of 1 lemon, and 1 teaspoon of ground pepper, then stir well to finish.
