Anchovy 1.5 kg Fish sauce 2 cups Brown sugar 2 cups Rice powder 20 gr Garlic 100 gr Chili 100 gr

How to choose fresh, good anchovy fish

  • You should choose fish with shiny skin, clear eyes that are not cloudy and watery.
  • To check the freshness of the fish, you can press it with your hand; if the fish meat is still elastic, the fish is fresh and you should buy it.
  • Do not buy smashed anchovies, fish whose bodies are detached from the head, or fish that smell bad or are rotten.

How to Make Sour Fish Sauce with Anchovies

  • Prepare the Anchovies

    After purchasing the anchovies, soak them in salt water for 30 minutes, then rinse them clean and let them drain.

    Take a bowl of cold water, add 1 tablespoon of white wine, and soak for 5 minutes, then drain in a colander.

    Tip: You can put the anchovies in a colander and use your hands to stir them under running water to help clean out any dirt from the insides.

  • Marinate the Anchovies

    Peel and thinly slice the garlic, wash and slice the chili.

    Place the anchovies in a bowl, add the sliced garlic and chili, and mix well with 20g of roasted rice powder.

  • Make the Fish Sauce with Sugar

    Place a pot on the stove, add 2 cups of fish sauce and 2 cups of sugar, then bring to a boil over medium heat until the sugar is completely dissolved. Once the fish sauce boils, turn off the heat and let it cool.

Tips for preserving fermented fish for a long time

  • After the fish sauce has fermented, you should place it in the cool part of the refrigerator for storage.
  • You should store the fish sauce in a glass jar or a bag, tightly sealed after each use to prevent bacteria from entering from the outside.
  • Each time you take the fish sauce to use, you should use clean utensils such as a ladle or cup that do not mix with other ingredients while cooking.
  • Once the fish sauce has been taken out, absolutely do not put it back, you should transfer it to a separate jar or a different plastic bag for storage for the next use.
