Ingredients for stir-fried sour plums with ginger For 5 servings
Sour plums 500 g Sugar 400 g Ginger 30 g Salt 10 g
How to choose good sour plums:
- To choose fresh green plums, you should select each fruit carefully.
- Do not buy fruits with dark, bruised skin. Good plums are those with slightly rough skin.
- Choose green plums with thick flesh to get more sour meat (medium sour plums).
- Shiny plums will not be good because they are still too young, leaving them for too long will cause them to rot. Also, do not choose plums that are too old as they will have many large seeds and be less sour.
How to process stir-fried sour plums with ginger
-
Prepare the sour plums
After buying, wash the plums clean, use a knife to scrape off the outer skin and then soak them in limewater for 3 hours to remove the sap.
Note:
- Only use a knife to scrape the skin, do not peel it as this will make the plums easily mushy.
- If you do not scrape the skin, the snack will taste bitter when enjoyed.
-
Blanch sour fruits
After soaking, take the sour fruits out and rinse them with water to reduce the odor.
Boil a pot of water, quickly blanch the sour fruits, then quickly remove them to drain (do not blanch for too long to avoid making the sour fruits soft or mushy).
Note: Blanching the sour fruits will make the final product crunchier after processing.
-
Soak sour fruits with sugar and ginger
After blanching, put the sour fruits into a pot with 30g of julienned ginger, 400g of sugar, and 10g of salt, mix well, and then marinate for 1 hour for the sugar to dissolve.
-
Stir-fry sour fruits
After the sugar has dissolved and blended with the ingredients, place it on the stove and stir-fry. When the mixture boils and the sour fruits gradually turn amber, turn off the heat and remove the sour fruits and ginger.
-
Dry the sour fruits
Preheat the oven to 160 degrees Celsius about 15 minutes beforehand.
Place the sour fruits and ginger on a baking tray lined with parchment paper and put them in the oven to dry for 1 hour at 150 degrees Celsius.
Note: You can sun-dry the sour fruits until they are dry.
-
Final product
The dried sour plums have a shimmering color mixed with strands of ginger and a faintly alluring aroma. When eaten, all the flavors blend together from the salty, sweet, sour, and fragrant taste of ginger, creating an enticing snack that you can enjoy endlessly without getting bored.
Some notes when making sweet and sour ginger plums:
- Sour plums are a seasonal ingredient and the time this ingredient is available for sale is quite short, so if you want to enjoy and process sour plums year-round, you can buy them, peel them clean, wash them thoroughly, let them dry to tighten the surface of the sour plums, and then put them in the freezer for later use.
- After processing, sour plums can be placed in a box or a tightly sealed jar and stored in a cool place, avoiding contact with high temperatures. It is not advisable to put the plums in the refrigerator as they will sweat when taken out.
