Prepare the Ingredients
Soak the dried white wood ear mushrooms in hot water for 30 minutes to expand, then wash them thoroughly. Peel the carrot, wash it, and slice it thinly into flower shapes; chop the garlic and chili finely.

Make pig ears
Add 12g of jelly powder, 1 tablespoon of crunchy jelly powder, and 800ml of water into a large pot, then stir well to prevent clumping. After 20 minutes, place the jelly pot on the stove and simmer on low heat while continuously stirring the jelly. When the jelly pot boils, add the jelly strands and stir for about 2 minutes, then turn off the heat.
Next, pour a thin layer of jelly at the bottom of the mold and evenly arrange the mushrooms on top of the jelly. Then continue to pour the jelly mixture into the mold to cover the layer of mushrooms. Place the tray in the freezer for about 1 hour.

Prepare the pickling liquid
Add 250ml of vinegar water with garlic, chili, 250ml of filtered water, 100g of sugar, and 1 tablespoon of salt into a pot and bring to a boil.
Once the pig ears have set, slice them thinly and place them in a jar along with carrots, pouring the sweet and sour liquid over them to marinate. Place in the refrigerator, and after one day, it will be ready to eat.
