  • Prepare the ingredients

    Remove the corn kernels, wash them thoroughly, and cut them into 5cm slices.

    Peel the onion, wash it, and then cut it into wedges.

    Cut the vegetarian sausage into bite-sized pieces.

    Wash the green onions and cut them into small pieces.

  • Make the rice cake

    Dip 2 rice paper sheets in water until wet, then tightly roll them up. Repeat until all the rice paper sheets are used.

    Use a knife to cut the rolled rice paper into small pieces about 7 – 8cm long.

  • Make the sauce

    Heat oil in a pan and sauté the green onions until fragrant.

    Next, add the vegetarian sausage, corn, 250ml of fresh coconut water, a little soy sauce, 2 tablespoons of ketchup, 1 tablespoon of sugar, 1 teaspoon of vegetarian seasoning, and 2 teaspoons of Korean chili powder to the pan.

    Stir the mixture well and cook for 10 minutes.

    Note: You can adjust the amount of soy sauce according to your taste.

How to choose ingredients

For chicken thigh mushrooms

  • You should choose chicken thigh mushrooms that have a round cap, brown and shiny, with a fresh white stem, and feel very firm to the touch.
  • Delicious chicken thigh mushrooms usually measure between 12 – 15 cm long; avoid buying mushrooms that are too long as they tend to be hollow and lack fresh flavor.
  • Fresh chicken thigh mushrooms have a distinctive aroma similar to almonds. You should avoid mushrooms that have an unpleasant odor and uneven coloration.

For fresh shiitake mushrooms

  • Fresh shiitake mushrooms usually have caps that resemble an umbrella, are not bruised, and have a slightly yellow-brown color.
  • You should choose mushrooms of moderate size, not too large or too small, with short stems and tightly curled caps.
  • You should avoid mushrooms that are slimy; fresh mushrooms will have a thin, paper-like film on them.

How to prepare Vegetarian tokbokki

  • Prepare the mushrooms

    Soak the chicken thigh mushrooms in diluted salt water for about 10 – 15 minutes, rinse thoroughly, and then cut into thin slices suitable for eating.

    For the shiitake mushrooms, soak them in warm water for 7 – 19 minutes, then cut off the stems and rinse again with water before slicing thinly.

    You separate each leaf of the napa cabbage, wash it thoroughly with water several times, then let it drain. Next, you cut the napa cabbage into small pieces.
