How to choose good chicken
For pre-prepared chicken
- You should choose chickens that have an even yellow color and a darker color in areas like the wings, breast, or back. Chickens usually have a compact, firm body and a narrow breast.
- Pre-prepared chickens often have thin, smooth skin, a certain elasticity, and do not have bruises or spots of purple or red blood.
For live chickens
- Choose those with bright red combs, lively eyes, and quick movements. The feathers should be smooth and close to the body, with a sharp, small beak and no signs of discharge.
- The legs should be small, neat, and the skin should be uniformly yellow with a shiny appearance. When lifting the feathers, the skin should feel soft, thin, and have some large yellow streaks under the armpits and chest.
How to Prepare Steamed Chicken with Rice Wine

Prepare the Ingredients
The chicken you bought should be soaked in salted water for about 10 – 15 minutes before proceeding with preparation.
Then you can use rice wine to gently massage the chicken, then rinse it with cold water. Doing this will help eliminate bacteria and the fishy smell of the chicken meat.

Prepare Other Ingredients
Spring onions and lemongrass should be washed with water and then cut into pieces about 3 – 4 cm long.
The onion should have its skin removed and then cut into 4 equal parts. After that, separate the layers of the onion to put into the chicken’s cavity.
Shallots and garlic should also be peeled, crushed, and finely chopped.
Straw mushrooms should have the dirt removed, soaked in salted water for about 10 – 15 minutes, and then rinsed with clean water.

Marinade preparation
Add minced shallots and garlic into a small bowl, then add the seasonings and mix well.
The seasonings include 1 teaspoon of pepper, 1/2 teaspoon of monosodium glutamate, 2 teaspoons of seasoning powder, 2 teaspoons of sugar, 1/2 teaspoon of salt, and 4 teaspoons of fish sauce.

Marinate the chicken
Pour the marinade over the cleaned chicken.
Wear plastic gloves and evenly apply the marinade all over the chicken while gently massaging to ensure the chicken absorbs the seasonings.
You can put any excess marinade into the chicken’s head or belly.

Add 1.5 – 2 liters of water and 200 – 250ml of good white wine into the pot and bring it to a gentle boil.
