Rice paper 200 gr Pork sausage 200 gr Shallots 100 gr Chili 2 pieces Sugar 4 tablespoons Fish sauce 4 tablespoons Fresh vegetables 200 gr (lettuce/ Vietnamese coriander/ cucumber…)

How to make Wet Cake with Rice Paper

  • Prepare the dipping sauce for the wet cake

    Add sugar to a bowl along with 8 tablespoons of warm water, stir well until the sugar is completely dissolved, add fish sauce, and use scissors to cut the chili into slices and put it into the fish sauce bowl.

  • Frying Shallots

    Peel the shallots and slice them thinly.

    Pour oil into the pan, wait until the oil is hot, then add the shallots, frying over medium heat until the shallots turn crispy and golden. After that, pour the shallots into a sieve to make them crispier; the remaining oil after straining can be poured into a bowl to brush onto the rice paper.

    Tip:

    • You should put the shallots in the freezer for about 15 minutes before cutting them to avoid eye irritation.
    • Alternatively, you can place a bowl of cold water next to you to dip the knife into while cutting.

    Tips for crispy fried shallots:

    • When buying, you should choose medium-sized shallots, avoid selecting ones that are too large.
    • After peeling the shallots, soak them in diluted salt water for about 30 minutes; this will help make them crispier when frying.

    Sliced pork sausage into thin, bite-sized pieces. Wash and chop the vegetables and cucumber.

  • Soak the Rice Paper

    Fill a basin with water, then gradually add each piece, waiting until the previous rice paper is submerged before adding the next one. Soak for about 3 minutes.

    Tip: You can add a little lemon juice to the water for soaking the rice paper, which will help the rice paper become more fragrant and taste similar to the rice paper made from flour.
