Tips for choosing good eggs

  • Choose eggs with thick, hard shells, a thin powdery layer on the outside, and moderate size as they are usually fresher than thin and large eggs.
  • Avoid eggs with very smooth, shiny shells that seem to have cracks as they are often old eggs that have been stored too long.
  • Check if the eggs are fresh by gently shaking them; if there is no movement inside, then the eggs are definitely fresh; if there is movement, the eggs are old.

How to prepare Sweet and Rich Egg Dish

  • Separate the egg yolks

    Crack 10 duck eggs and 10 chicken eggs into a bowl. Then, gently scoop out each yolk with your hands, being careful to do it very gently so that the yolks do not break or get crushed.

    Next, take another bowl, place a sieve on top, and put a soft cloth over it. Add the separated yolks onto the cloth.

  • Sift and whisk the eggs

    Use a whisk to beat the yolks until they are completely dissolved. Then gather the four ends of the cloth, gently squeeze to let the yolks flow down into the sieve.

    Strain once more using the sieve. Make sure in the end, you have a smooth mixture of yolks, without any lumps, then add 1 spoon of jasmine essence into the yolk mixture and whisk it well.

    Next, place the filtered egg mixture into a pastry bag. Cut off the pointed end at the bottom of the bag.

  • Making sweet eggs

    Place a pot on the stove, add 1 liter of water and bring to a boil, then add 100g of sugar, 4 pandan leaves, 1 tablespoon of jasmine essence, stir well until the sugar dissolves, then remove the pandan leaves.

    After the sugar has dissolved, slowly pump the eggs into the pot. Be careful to pump evenly in a circular shape so that the eggs can form long strands when finished and do not break.

    The eggs will float to the surface when cooked. Use a toothpick to gather the eggs into a bunch, then scoop them onto a plate.

Tips for preserving eggs for a long time without spoiling:

  • If you have leftover eggs, you can place them in a basket and put it in a cool, dry place, avoiding moisture.
  • If you buy eggs with slightly dirty shells, do not wash them with water as it will remove the protective coating and make them spoil easily. In this case, use soft paper or a cloth to clean the eggs to help preserve them longer.
  • You can also place the eggs in the refrigerator refrigerator to preserve them, but do not keep them right at the refrigerator door as the frequent temperature changes when opening the door can cause the eggs to spoil quickly.
  • If storing in the refrigerator, applying a layer of cooking oil on the eggshell can help preserve them longer.
