How to choose good quality red beans

How to make Red Bean Filter Cake

Cook the red bean
Soak 200g of red beans overnight, then boil with 2 liters of water for 1 hour.
Next, add 200g of rock sugar to the beans and stir until the sugar dissolves. Add 3 pandan leaves tied in a bundle and cook together with the beans. Continue to cook the beans for another 30 minutes.

Make coconut meat pearls
Dice 200g of coconut meat, dividing it into 2 equal parts. One part is marinated with 20ml of beetroot juice, and the other part is marinated with 20ml of pandan leaf juice. Mix well to allow the color to absorb into the coconut.
Add 25g of tapioca flour to each part of the marinated coconut and mix well to coat the coconut with the flour.
Then, put these two parts of coconut into boiling water and cook until the pearls float, then use a sieve to remove them and immediately place them in a bowl of ice water.

Make thread pearls
Mix 150g of tapioca flour with 60ml of boiling water. Knead well by hand until the flour is smooth and evenly mixed.
Sprinkle a little dry tapioca flour on the cutting board to prevent sticking. Then spread the mixed tapioca dough on the board and roll it out into a thin piece about 5cm.
Use a knife to cut the dough into equal threads. Then place the dough threads into boiling water and cook until the pearls float, then remove and place them in a bowl of ice water.

Cook coconut milk
Add 220ml of unsweetened fresh milk, 100ml of coconut milk, and 50g of condensed milk to a pot and stir well. Heat the mixture until it just boils lightly, then turn off the heat.
