How to choose fresh, delicious longan
- Choose longan varieties with thick flesh and small seeds like longan lồng, longan tiêu da bò,… for a tastier dish.
- You should buy longan in bunches, with green leaves, and the stems still fresh and slightly moist. The fruits should be large and have a dark yellow color.
- When holding the longan branch, the fruits should not fall off and should have a pleasant fragrant smell.
- To ensure you choose good longan, you should try one fruit before purchasing. When peeling, the flesh should be thick and juicy, with small seeds. If the longan flesh has a sweet fragrance like rock sugar, then it is definitely fresh longan.

How to make Lychee Soy Milk Pudding

Cooking the pudding
Mix 180gr of sugar and 3 teaspoons of agar powder evenly. Then add 2 liters of unsweetened soy milk. Place it on the stove over medium heat, add a few washed pandan leaves, and stir well until the sugar is completely dissolved.
Dissolve 3 teaspoons of cornstarch and 2 tablespoons of water, then pour it into the pudding pot. Stir continuously to prevent the pudding from clumping. After the pudding boils, turn off the heat and pour it into molds.
Tip- To prevent the pudding from clumping, mix the agar powder and sugar before dissolving it in water.
- To avoid holes in the pudding, you must skim off the foam multiple times while cooking, and also remove any small bubbles when pouring into molds.
- You can add ground lychee to make the pudding more delicious.

Poring into molds
You stir the mixture evenly and scoop it into molds or bowls. At the same time, skim off the small bubbles to make the pudding smooth and not pockmarked.
Leave the pudding to set, then store it in the refrigerator for about 2 – 3 hours.
Tip: You can add small cut lychee pieces so that the pudding is crunchy when eaten. -
