How to prepare Dragon Fruit Noodles
-
Prepare and extract dragon fruit
First, you need to cut the dragon fruit in half, peel off the skin, and only take the red flesh inside. Prepare a sieve with small holes to filter the dragon fruit juice. Rub the dragon fruit to extract the juice and flesh for a smooth liquid without any lumps.
Note: Do not put the dragon fruit in a blender because this will cause the seeds to break.Add a little salt and crack an egg into the dragon fruit juice bowl, then mix well.
-
Mix and knead the dough
Add 800 grams of flour to the dragon fruit juice bowl and mix well, then put on gloves and knead the dough for about 5 minutes. While kneading, sprinkle a little flour on the surface and knead evenly.
Note: When kneading the dough, use your wrist to press into the dough ball to ensure the dough is kneaded evenly and smoothly. It is advisable to place the dough on a large flat surface for easier and more even kneading.Once the dough is kneaded, shape it into a round ball and place it in a bowl, covering it tightly with plastic wrap, and let it rest for 30 minutes.
-
Rolling and cutting the dough
Pour a little flour onto a flat surface, spread it out, then place the dough on top and use a glass bottle or a round glass to roll the dough if you don’t have a rolling pin at home.
When the piece of dough gets larger, cut it in half to make it easier to roll. As you roll the dough thinner, sprinkle some flour on the surface to prevent sticking.
Note: Roll the dough into a long shape so that when cutting, the strands are long and visually appealing.Dust the surface of the dough with flour to fold the two edges of the rolled dough for easier cutting. Place the dough on a cutting board and cut into strands 0.3 cm thick.
Note: Do not press down hard on the dough when cutting, as the layers will stick together, making it difficult to separate into strands. You can apply a layer of flour on the knife to make cutting easier. -
Boiling the noodles
Place a pot of boiling water on the stove, add a teaspoon of cooking oil, and then add the dragon fruit noodles to boil without sticking together. Use a ladle to gently stir the noodles apart. Boil for about 1 minute, then remove and place the noodles in a bowl of cold water before draining.
