Tips for choosing grapefruit with thick peel for making jam
- If you choose grapefruit to eat the segments, select fruits with thin skin; however, if you want to make jam, you need to choose grapefruit with thick, spongy peel. If you prefer jam with a pink color, choose pink-fleshed grapefruit, while white-fleshed grapefruit will yield clear white jam.
- First, choose grapefruit that is shiny on the outside, slightly yellowish, and round in shape. When held, it feels firm and heavy, indicating it is a juicy, good-quality grapefruit, not dry and fibrous.
- Tap on the grapefruit and listen for a “pop” sound; if it feels like there is a lot of air inside, it means the grapefruit has thick skin and plenty of spongy flesh. A “thud” sound indicates a grapefruit with thin skin.
- The outer layer of spines on the grapefruit is large and sparse, indicating that the grapefruit is ripe and good. If the spines are small and dense, it indicates an immature and poor-quality grapefruit.
How to Make Grapefruit Peel Jam

Prepare the grapefruit peel
Peel the grapefruit, remove the green outer skin, and take the white flesh to make jam.
Cut the grapefruit peel into large pieces about 10cm, put them in a bowl and gently massage with 2 tablespoons of salt, then rinse with cold water 5 times. Finally, gently squeeze to remove excess water from the grapefruit peel.

Boil the grapefruit peel
Boil a pot of water, add the grapefruit peel and boil for 3 – 4 minutes, then remove and discard the boiling water. Boil another pot of water and add the grapefruit peel again, boiling for 3 minutes, then remove and soak the grapefruit peel in a bowl of ice water for 15 minutes.
After 15 minutes, take the grapefruit peel out and press lightly to remove excess water.
In a bowl, dissolve 140g of sugar in 500ml of water, then add the grapefruit peel and mix well, marinating for 3 hours to allow the sugar to penetrate deep into the grapefruit peel.

Candy Cooking
You place a pan on the stove, add 260g of sugar and 1 liter of cold water, then simmer on low heat until the sugar completely dissolves, then add the grapefruit rind to cook.
Keep the heat low and stir continuously for the sugar to soak into the grapefruit rind and for the water to evaporate, then turn off the heat.

You take the grapefruit rind out to sun dry for about 2 hours until the candy is dry. If you prefer it sweeter, you can roll the candy in white sugar to coat it.
