Ingredients for Traditional Red Bean Yokan For 4 people

Agar jelly powder 8 gr Red beans 500 gr White sugar 200 gr (adjust according to your sweet preference) Filtered water 800 ml Ginger 1 piece (small type if you like the cake with a hint of ginger)

How to choose good quality red beans

  • You should choose beans that are bright red, free from pests and show no signs of mold or unpleasant odors.
  • You should choose beans that are of moderate size so that after cooking, they achieve the right softness and delicious flavor.
  • Avoid choosing overly large beans, as they often do not taste good, have less nutrition than smaller beans, and particularly tend to have a slight bitterness when eaten.

Note:

Buy whole red beans, wash them, and soak them overnight so that when cooked, they will be sweeter and more flavorful. Additionally, if you don’t have time, you can use 600gr of red bean powder as a substitute. This type of red bean powder should be purchased from stores specializing in Japanese goods for the best flavor!

How to make traditional Red Bean Yokan Cake

  • Steaming red beans

    500g of red beans soaked overnight, then drain the water.

    Put all the beans into a deep pot, place it on the stove, then add 600ml of water, adjust the heat to medium, and cover the pot to steam the beans for about 45 minutes to 1 hour until the beans are soft.

    Tip: If you have a pressure cooker, you can use it. The steaming time will be faster, around 30 – 40 minutes!

  • Blending red beans

    When the beans are soft, drain the water and put all the beans into the blender, blend until smooth, adding a little water to make it easier to blend.

    Tip: If you don’t have a blender, you can use a spoon to mash the red beans. However, this method will take more time and the beans will not be as smooth as when using a blender!
